Pumpkin Butter

It seems that I have been on quite the pumpkin kick lately! I sure have been enjoying the trip and the next stop was pumpkin butter. I had seen pumpkin butter popping up on the food blogging sphere and it sounded good. Last year I enjoyed an apple butter that I had made and I used that recipe as a starting point. The pumpkin butter was super easy to make as I already had some home made pumpkin puree on hand. The pumpkin butter was so good! If you like pumpkin will really like pumpkin butter. The pumpkin flavour is amazingly concentrated and good. The spices are reminiscent of pumpkin pie and there is a hint of apples in the background from the cider. So far I have been enjoying the pumpkin butter on toast in addition to by the spoon.

Pumpkin Butter

Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40 minutes Servings: 50
ingredients
  • 2 cups pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup apple cider
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
directions
  1. Simmer everything in a pot until most of the liquid has evaporated and the sauce has thickened.

    I knew you’d be putting all that pumpkin you hoarded to good use. This is the kind of butter that you need to fill small pretty glass containers with and give them as holiday gifts to friends and me. (did you get the last part???huh???)

    Interesting! I just saw a recipe for pumpkin butter pie, but it used a pre-made pumpkin butter.

    Great spread — I’m going to substitute butternut squash, which I prefer to pumpkin but which gives the same texture and similar flavor. Delicious.

    I keep meaning to make apple butter, and now I’ve got to try this, too! Plus, it sounds very approachable–I really have no excuse. I could see myself going through that very quickly to top off my bagels. It sounds delicious!

    A huge gifted pumpkin is now tidily jarred up in it’s new form…pumpkin butter. Really great stuff but oh so messy to make! I cheated and finished it in the microwave, much much faster than all that stirring and messy bubbles. I had to wash the floor when all was said and done.

    I learned that my mouth does not enjoy pumpkin butter. Or perhaps I do not enjoy concentrated pumpkin flavor.

    I'm glad I made it however, and my family is eating it. Thank you for posting the recipe. The butter is lovely scented too!

    This looks amazing, as do all the recipes on your site!
    For a couple of years, I have been canning apple butter, and I was just wondering, do you think this pumpkin butter could be canned safely? I would think it could, because of the vinegar…and apple butter doesn't even have that….

    Just curious what you thought.
