The other day I came across some fresh poblano peppers which I had been looking for for a while. I immediately picked some up and I remembered seeing this recipe for roasted cauliflower and poblano soup which sounded really good. It turned out to be well timed as it has gotten cooler and a warm soup would be perfect. The recipe was pretty similar to the roasted cauliflower and red pepper soup that I had made a while ago and really enjoyed. I roasted the poblano peppers in the same way that I roast red peppers . The roasted poblano peppers were really nice. Unlike the roasted red peppers that are sweet the roasted poblano pepper were not sweet and had a bit of heat to them, but not too much. The soup turned out really good. It was nice and simple to make and roasting the vegetables first made the soup really tasty. I garnished the roasted cauliflower and poblano soup with some chopped cilantro and goat cheese. Printable Recipe

Oh this sounds great. I’ve been using poblanos pretty regularly lately and I like them a lot. Just the right heat level for me. And I love cauliflower, too, so this sounds like a great way to use both ingredients.

OK, you’ve convinced me, I have to make cauliflower soup!

What a beautiful soup. Poblano peppers really have a great flavor. I can see where they would taste great with the cauliflower.

Since this soup has somewhat of a Mexican connection with the poblano peppers, I would suggest you try crumbled queso fresca cheese or crumbled cotija cheese the next time you make this soup.

Kevin, please pass me a large bowl of that Roasted Cauliflower soup. At one time I owned a soup and sandwich shop and I know my customers would have loved that soup. Well done.

Giz – I found the poblano’s in a small produce store in the lower level of the St. Lawrence Market. They had a few varieties of chilis including Thai chilis.

I haven’t tried poblano peppers yet, but I’m afraid of Mexican food because it’s too hot for me. Are these peppers mild enough? What do you think?
diva says
sounds like a very warming soup. hearty!
Kevin says
Daziano: Poblano peppers are fairly mild. I used two to increase the heat but you could start with one or even a half.

Lovely. Goat cheese optional? I think not 🙂
