Roasted Strawberry Salad with Baked Goat Cheese

Unfortunately this may well be my last strawberry post for a while. The strawberries were all but gone from the farmers market and there was this one last recipe that I just had to try. Goat cheese is one of my favorites but I had never even thought about breading it and baking it. I had also recently discovered the wonders of roasting strawberries and I thought they would go well with the baked goats cheese. Since the strawberries give off a lot of juice when roasting I used that juice as the base for the salad dressing. I like to add nuts to my salads and I thought that some toasted pecans would go well. This roasted strawberry and baked goats cheese salad was really good! I enjoyed the warm goats cheese with its slightly crisp coating and it went well with the roasted strawberries. The entire salad was covered in the amazing flavour of the roasted strawberry dressing. I have lingered on strawberries for long enough. It is time to move on to enjoying the new fruits and vegetables that are now available.

Roasted Strawberry Salad with Baked Goat Cheese

Roasted Strawberry Salad with Baked Goat Cheese

Prep Time: 30 minutes Cook Time: 20 minutes Total Time: 50 minutes Servings: 4
ingredients
  • 4 ounces goats cheese
  • 1/4 cup bread crumbs
  • 2 cups strawberries (stemmed and halved)
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 2 handfuls romaine lettuce (cut into bite sized pieces)
  • 1 handful peas (optional)
  • 1 green onion (sliced)
  • 1 handful pecans (toasted, chopped)
  • 1 tablespoon olive oil
  • 1 teaspoon mustard
  • salt and pepper to taste
directions
  1. Freeze the goat cheese for 20 minutes.
  2. Slice the goat cheese into discs.
  3. Dredge the goat cheese in the bread crumbs.
  4. Bake the goat cheese in a preheated 425F/220C oven for 6 minutes.
  5. Toss the strawberries in the honey and balsamic vinegar to coat.
  6. Place the strawberries in a baking dish in a single layer.
  7. Roast the strawberries in a preheated 425F/220C oven until slightly caramelized, about 10-12 minutes.
  8. Pour the juices from the pan into a bowl and mix with the olive oil, mustard, salt and pepper.
  9. Assemble salad and toss to coat with the dressing.

    I actually had this EXACT salad at a restaurant in Southport NC while on vacation several weeks ago. It was very impressive then, and looks absolutely delicious as your version!

    I did saute some imported strawberries last winter, and served them over pound cake and ice cream. It’s amazing that heating the strawberries so greatly enhances their flavor!

    i love goat cheese! i have coated little goat cheese disks in ground almonds and hazelnuts and pan-fried them before adding them to salads. soooo good. this salad looks spectacular kevin!

    What a refreshing looking salad! Never thought to roast strawberries, I can just imagine how flavorful they become. And the goat cheese, love the idea of breading and baking…I’ve been trying to get ideas on what to do with the goat cheese in my fridge…will have to try this!

    I had to make this salad as soon as I saw it, what a great idea. The strawberries came out fantastic. I had to dip the goat cheese in some milk to get the breadcrumbs to adhere. After baking for the recommended time the bread crumbs were barely browned. Can you suggest another method…broiling?But the taste was incredible. The combination of the berries with the goat cheese was wonderful and the dressing was equally delicious. This will be a favorite in my recipe box…..Thank you!

    Hello – I don't think I ever told you about this, so I've dug out your post to let you know – this recipe was great, but what came out of it was one of the best desserts we've ever made. Make sure you save some of the roasted strawberries from this recipe overnight in the fridge, and the juices continue to run and create a spectacular sauce. When reheated in the microwave or gently on the stove, these roasted strawberries are amazing on vanilla gelato or vanilla ice cream. We've roasted strawberries using your instructions the day before a dinner party and served the warmed strawberries and sauce for dessert, and it always knocks peoples' socks off! The tangy sweet strawberries melting the gelato as you eat it. Oh my! Thanks again
