Roasted Strawberry Shortcake Shake

Strawberry shortcake in the form of a cool and refreshing milkshake where the strawberries are roasted to bring out more of their natural flavour.

When I made the strawberry shortcakes earlier in the week I made sure to make a double batch of the shortcake so that I would have some leftovers to use in something else. I came across the idea for roasted strawberry shortcakes on Spoon Fork Bacon not too long ago and I really liked the sound of using the classic flavours of strawberry shortcake in a cool and refreshing drink that would be perfect on a hot summer day. This drink starts out with your basic milkshake ingredients including the milk and the ice cream and then it moves on to add some strawberries and actual shortcake! Yep, you heard me right, big chunks of shortcake are added to the shake and then it is pureed in the food processor leaving tiny bits of cake in your shake! The next part that really makes this treat is that the strawberries are roasted first to concentrate and bring out all of their flavour just packing the shake with strawberry goodness! Right now I am going to enjoy this really cool shake but up next, I think it is going to have to be roasted strawberry shortcake ice cream!

Roasted Strawberry Shortcake Shake

Prep Time: 5 minutes Cook Time: 20 minutes Total Time: 25 minutes Servings: 2

Strawberry shortcake in the form of a cool and refreshing milkshake where the strawberries are roasted to bring out more of their natural flavour.

ingredients
  • 1 pound strawberries, cut in half
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sugar
  • 1 cup shortcake, cubed
  • 1 1/2 cups vanilla ice cream
  • 1 1/2 cups milk
directions
  1. Toss the strawberries in the balsamic vinegar and sugar, place on a baking sheet in a single layer and and roast in a preheated 425F/220C oven until they start to caramelize, about 15-20 minutes.
  2. Puree every thing in a food processor or blender and enjoy!

    This reminds me of apple pie ice cream where pie crust is churned into the ice cream! Must delicious to get those bites of buttery heaven.

    Just made these two days ago and I must say these shakes were utterly fantastic! My family and I absolutely loved them! We will definitely be making these again! This was definitely one of the best shakes I've ever had if not the best strawberry shake I've ever had. Thanks so much again for another great recipe! 🙂

    Oh my GOODNESS, these look so delicious! I just saw a cooking show yesterday about an ice cream shake made with apple pie, which also looked awesome. But strawberry ice cream is one of my favorite flavors, so yours wins. I can't wait till summertime when strawberries are in season!!
