Cucumber, Mint and Lime Refreshers

I don’t post a lot of drink recipes but this summer I have been enjoying a lot of different drinks using plenty of fresh produce like this cucumber, mint and lime refresher! I almost always have a glass of water with my meal or while I am relaxing or sitting at my work desk and why not jazz that water up with some fresh fruits, berries, vegetables and herbs? You can simply add the fresh fruits, berries, vegetables and herbs to your water and enjoy the hint of flavour that they add or you can puree them into the water and strain any remaining solids to get an even more powerful hit of flavour! The combinations of flavours are near endless from simply adding lime or lemon juice to water to classics like lemonade, raspberry lemonade, etc. and adding a veggie or a fresh herb is always a fun way to go. For this drink I go with cucumber, mint and lime juice for a super refreshing drink that is absolutely thirst quenchingly good!

Cucumber, Mint and Lime Refreshers

Prep Time: 5 minutes Chill Time: 25 minutes Total Time: 30 minutes Servings: 4
ingredients
  • 8 cups water
  • 1 cucumber, sliced
  • 1-2 limes, juice and zest
  • 2 tablespoons mint
directions
  1. Mix everything, optionally pureeing in a food processor and straining the solids out, before chilling in the fridge and enjoying!
Option: Replace 4 sups water with 6 cups of ice and puree in a blender to make smoothies!
