Creamy Roasted Garlic Mashed Potatoes

It seems that I have not been do much with potatoes lately. I had been wanting to try making my own garlic mashed potatoes for a while and I thought: What better to go with the steak dinner that I was having? Making the garlic mashed potatoes took a bit of effort but it was certainly worth it. The roasted garlic mashed potatoes turned out really well! They were so creamy and good. The flavour of the sweet roasted garlic was just amazing. These were easily the best mashed potatoes that I have had. I will definitely be making these again.

Ingredients:
1 pound potatoes, peeled and cut into 1 inch cubes
1 head roasted garlic
1 tablespoon butter, room temperature
1/4 cup sour cream or cream cheese or Greek yogurt
milk to taste
salt and pepper to taste

Directions:
1. Boil the potatoes until fork tender, about 20-30 minutes.
2. Drain the potatoes.
3. Mash the potatoes along with the garlic, butter, sour, cream cheese and enough milk to bring the potatoes to the desired consistency.
4. Season with salt and pepper.
5. Garnish with roasted garlic, chopped parsley, chives green onions, etc.

Wow, roasted garlic and cheese - mmm!

By the way, if you have leftover roasted garlic, peel it then put it on a plastic covered plate and freeze it. Then when it is frozen store it in a double baggie. Just thaw it out to use it.

Oh I can imagine the pungent garlic in the mashed potatoes. Another simple trick for mashed potatoes. Gotta try it soon!

I'll pass on the meat, but you surely do encourage me to experiment more with spuds.

I would include some soaked dried wild mushrooms with a bit of dill.

mmmmm, I love potatoes. I haven't been doing much with them lately either. And I've always wanted to roast my own garlic. I'm definitely going to have to try this.

Some other wonderful additions I've enjoyed in the past: goat cheese, caramelized/roasted shallots, or mushrooms.

Oh Kevin! Now you've done it! Mashed potatoes are my favorite comfort food. I can't resist them. And adding the roasted garlic to them? Well, that just pushes it out of the stratosphere for me! Yahoo!
