A summery berry spinach salad with avocado, pistachios and feta in a creamy greek yogurt berry and poppy seed dressing!


ingredients
  • 5 ounces baby spinach
  • 1 cup strawberries, sliced
  • 1 cup blackberries
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 avocado, sliced or diced
  • 1/4 cup red onion, sliced
  • 1/4 cup pistachios, lightly toasted and coarsely chopped
  • 1/4 cup feta (or goat cheese), crumbled
  • 1/4 cup creamy berry poppy seed dressing
directions
  1. Assemble the salad, toss in the dressing and enjoy!

Option: Add chopped basil and/or mint.
