Berry Quinoa Salad

A fresh summer-y berry quinoa salad in a light and refreshing citrusy-mint dressing!

Summer berries are everywhere these days and they are absolutely amazing in this berry quinoa salad in a citrus-y mint dressing! The fresh berries, including strawberries, blueberries, raspberries and blackberries, are definitely the stars of the show here with the quinoa providing a healthy base for the salad! The salad is brightened up with a lemon and orange based dressing that has a touch of sweet honey and a strong hit of mint which makes it so light and refreshing! I like to finish the salad off with a crunchy toasted nut link almonds and crumbled feta would not be out of place here either! If you are looking for a way to enjoy summer, this fresh berry quinoa salad in a citrus-y mint dressing is the perfect way to go!

Berry Quinoa Salad

Prep Time: 10 minutes Cook Time: 20 minutes Cool Time: 30 minutes Total Time: 30 minutes Servings: 6

A fresh summer-y berry quinoa salad in a light and refreshing citrusy-mint dressing!

ingredients
    For the berry quinoa salad:
  • 1 cup quinoa, rinsed
  • 1 3/4 cup water (or juice)
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries
  • 1/4 cup almond slices, toasted
  • For the circusy-mint dressing:
  • 1 lemon, juice and zest (or 1/4 cup lemon juice)
  • 1 orange, juice and zest (or 1/4 cup orange juice)
  • 1 tablespoon honey
  • 1 tablespoon mint, chopped
directions
    For the berry quinoa salad:
  1. Bring the water and quinoa to a boil, reduce the heat and simmer, covered, until the quinoa is tender and has absorbed the water, about 15 minutes, remove from heat and let sit for 5 minutes, covered, before letting cool.
  2. Toss everything in the dressing and enjoy as soon as possible!
  3. For the circusy-mint dressing:
  4. Mix everything well!
Option: Cook the quinoa ahead of time and store it in the fridge until you make the salad.
Option: Replace the mint with basil or another herb.
Option: Replace the almond slices with another nut.
Option: Add crumbled feta!
