My current obsession is my peach honey dijon balsamic vinaigrette and although it’s amazing on simple salads I just could not help but think about using it in this grilled peach and honey dijon chicken salad with goat cheese and pecans! I took the dressing and used it as a marinade for some chicken which I then grilled and sliced for the salad! Fresh peaches would be great but I can not help but grill them for this salad and grilling them makes them so much better along with adding some smokey charred flavour! The salad is rounded out with red onion, pecans and creamy goat cheese along with peach honey dijon balsamic vinaigrette. I have to say that this grilled peach and honey dijon chicken salad with goat cheese and pecans is simply fabulous!
It’s so good that I have made it several times in the last week adding things like raspberries, blueberries and even some grilled corn! What a perfect summer salad!

Grilled Peach and Honey Dijon Chicken Salad with Goat Cheese and Pecans
A summery grilled peach and peach-honey dijon marinated chicken salad with goat cheese and pecans!
ingredients
- 1 pound boneless and skinless chicken
- 1/4 cup peach honey dijon balsamic vinaigrette
- 4 peaches
- 6 cups lettuce
- 1/4 cup red onion, sliced
- 4 ounces goat cheese, crumbled
- 1/4 cup pecans, chopped
- 1/4 cup peach honey dijon balsamic vinaigrette
directions
- Marinate the chicken in the peach honey dijon balsamic vinaigrette for 30 minutes to overnight.
- Shake the extra marinade from the chicken and grill over medium-high heat until cooked and lightly charred, about 3-6 minutes per side before setting aside to rest for 5 minutes and slicing.
- Brush the peach halves with oil and grill until slightly charred, about 1-2 minutes before slicing.
- Mix the salad, toss in the dressing and enjoy!
Option: Add 1 cup raspberries or blueberries!

fyi I wanted to print off a hard copy of your recipe. You should know the ads are taking over your site. and even in print mode they appear on the page…sometimes covering recipe content..I dont care to waste ink on ads… your recipes look delish too.

Kevin, this recipe looks amazing, as do all of yours. It does however say it serves 4. It lists just 1/2 pound of chicken, I could eat that myself. Am I missing something?
That should have been 1 pound of chicken, or 4oz per serving, for a light meal!
