On hot summer days I enjoy light meals that do not require a lot of cooking and this grilled chicken teriyaki and pineapple salad is perfect! Teriyaki sauce is a simple Japanese sauce that is both sweet and salty and in this recipe it’s used both as a marinade for the chicken and in the salad dressing. Once the chicken has marinated in the teriyaki sauce it’s quickly grilled, along with slices of pineapple and red bell peppers, before being sliced into bite sized pieces for the salad. The rest of the salad is built up with lettuce, cucumber, carrots, onions and crunchy cashews. The base of the dressing is the teriyaki sauce along pineapple juice and oil and it’s seasoned with garlic, ginger, and aromatic toasted sesame oil! Once the chicken has been marinated this grilled chicken teriyaki and pineapple salad meal comes together in less than 30 minutes making it so quick and easy that’s it will work even on busy nights!
Grilled Chicken Teriyaki and Pineapple Salad
Grilled teriyaki chicken and pineapple salad in a tasty teriyaki dressing!
ingredients
- 2 tablespoons soy sauce
- 2 tablespoons mirin
- 2 tablespoons sugar
- 2 tablespoons sake (optional)
- 3 tablespoons teriyaki sauce
- 3 tablespoons pineapple juice
- 2 tablespoons vegetable oil
- 1 teaspoon sesame oil
- 1 teaspoon garlic, grated (optional)
- 1 teaspoon ginger, grated (optional)
- 1 pound chicken breasts (or thighs), boneless and skinless
- 1 pineapple, peeled, cored and sliced
- 1 red bell pepper, sliced into long thin strips
- 6 cups lettuce, sliced
- 1 cup cucumber, sliced
- 1/3 cup carrot, sliced or shredded
- 1/4 cup red onion, sliced
- 1/4 cup green onion, sliced
- 1/3 cup cashew, toasted and coarsely chopped

- Mix everything.
- Mix everything.
- Marinate the chicken in the remaining teriyaki sauce for 30 minutes to overnight.
- Grill the chicken, pineapple and bell pepper over medium-high heat until just tender and slightly charred before letting cool for a few minutes.
- Slice the chicken, pineapple and bell pepper into bite sized pieces.
- Assemble the salad, toss with dressing and enjoy!

Is there a mirin that you think is best or teriyaki sauce?

I generally make my own teriyaki sauce rather than buying it. As far as mirin goes, I don’t have a large selection here so I generally get what’s available. The bottle in my cupboard right now is Kikkoman.
