Grilled Teriyaki Chicken and Pineapple Sandwich

I had some leftover pineapple that needed a home and I remember seeing a teriyaki and pineapple combo that sounded good. A simple grilled teriyaki chicken sandwich with a slice of pineapple sounded like it would hit the spot. I had also been wanting to try grilling pineapple and this seemed like the perfect opportunity to do it. This sandwich was pretty simple to make, though the chicken seemed to char quickly, no doubt because of the sugar in the teriyaki sauce. The grilled teriyaki chicken and pineapple sandwich tasted great. I really liked the combination of the sweet and salty teriyaki sauce with the sweet and tangy pineapple. I also enjoyed the fact that the pineapple was warm from the grill. A quick and simple meal for a warm summer day.

Grilled Teriyaki Chicken and Pineapple Sandwich

Prep Time: 8 hours 15 minutes Cook Time: 15 minutes Total Time: 8 hours 30 minutes Servings: 2
ingredients
  • 1 chicken breast
  • 1/4 cup teriyaki sauce
  • 1 slice pineapple
  • 2 sliced tomato
  • 2 leaves lettuce
  • 1 tablespoon mayonnaise
directions
  1. Marinate the chicken in the teriyaki sauce for 20 minutes to overnight.
  2. Grill the chicken and pineapple.
  3. Assemble sandwich.

    Grilling pineapple just makes it even more delicious and juicy. The teriyaki chicken would be a perfect compliment to the fruit. Great combination, Kevin!

    Good god, that is fantastic. LOVE pineapples in savory dishes, as you must know already 🙂 I’m not usually a fan of mayo but I do agree that it does belong in this sandwich 🙂

    LOL – don’t you just love left overs that need a home. This is a clever idea. I wonder though if you could have charred the pineapple and got it all nice and carmelized…then made it into a chutney or a spread to put on the bread – lol. How does that sound…hmmm!

    it’s funny because i was just thinking of having a teriyake-pineapple glaze combo for my meal tonight.. and then I saw your post! LOL.. grilled pineapple makes the fruit even better… drizzle a bit of nutella in it (warmed) and you’ll be have a simple dessert.
