Outdoor cooking is one of my favourite parts of summer and simple marinated and grilled meats like this huli huli grilled chicken are top on my list. Huli huli sauce in a Hawaiian style sauce that includes pineapple juice! It has an amazing combination of sweet, salty, sour and spicy and it’s great as a marinade for grilled meats, or as a BBQ sauce for dipping, or as a condiment in sandwiches! In this recipe, chicken thighs (or breasts) are marinated in the sauce before being grilled! Since the recipe already includes pineapple, I like to throw slices of pineapple onto the grill along with the chicken and I sometimes add slices of onions, red bell peppers, etc. Huli huli grilled chicken and pineapple sandwiches with sriracha mayo and a side of Hawaiian style pasta salad (recipe coming soon) makes for a perfect summer meal!
Huli Huli Grilled Chicken
Grilled chicken in a tasty Hawaiian themed huli huli sauce served in buns along with grilled pineapple slices!
ingredients
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 1/4 cup rice vinegar
- 1 tablespoon garlic, grated
- 1 tablespoon ginger, grated
- 1 tablespoon sriracha
- 1 tablespoon worcestershire sauce
- 1 teaspoon toasted sesame oil
- 1 pound boneless and skinless chicken breasts or thighs
- 4 buns
- 4 leaves lettuce
- 4 slices pineapple
- 4 tablespoons sriracha mayo

- Mix everything until the sugar dissolves into the liquid.
- Marinate the chicken in the half of the huli huli sauce for 30 minutes to 2 hours.
- Shake off any excess marinade from the chicken and grill over medium-high heat until cooked through and lightly charred on both sides, about 2-8 minutes per side, basting with some of the remaining huli huli sauce as it cooks.
- Assemble the sandwiches and enjoy!

Option: Add your favourite sandwich fillers like bacon, tomato slices, cheese, etc.
Note: For the sriracha mayo mix 3 tablespoons mayonnaise with 1 tablespoon sriracha.
I’m a huge fan of most of your recipes.
However, to say that cooking this chicken for 2-4 minutes per side…the chicken would not be cooked to the proper temperature for food safety.
Skinless, boneless chicken thighs…appx. 8 min, flipping at the halfway point.
For chicken breasts…8-10 minutes, flipping at the halfway point.
Just wanted to say that, so someone doesn’t eat raw chicken.
A temp of 165* is needed.

The cook time definitely depends on the size and thickness of the chicken and chicken should always be cooked to the required temperature. I have updated the cook time (to 2-8 minutes per side) to account for using larger pieces of chicken. Enjoy!
