This tasty pasta has it all! Bacon! Cheese! BBQ sauce! Chicken! Yum! The recipe is nice and easy! You start out by cooking the bacon, followed by the seasoned chicken, before adding onion and bell pepper. Next up is the sauce which is made with BBQ sauce, broth, and diced tomatoes and the pasta is added and cooked in the same pot! The final step is adding the cheese and letting it melt!
BBQ Chicken Pasta
A quick and easy, one-pot pasta with BBQ chicken, bacon and cheese.
ingredients
- 4 slices bacon, diced
- 1 pound boneless skinless chicken breasts or thighs, cut into bite sized pieces
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon (smoked) paprika
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, chopped
- 2 1/2 cups chicken broth (link)
- 1/2 cup BBQ Sauce
- 1 (15 ounce) can diced tomatoes
- 8 ounces pasta (gluten-free for gluten-free)
- 2 green onions, sliced
- 1 cup cheddar cheese, shredded
directions
- Cook the bacon in a large pan over medium heat before setting aside, leaving the grease in the pan.
- Add the chicken, seasoned with the onion powder, garlic powder, paprika, salt, and pepper, and cook for 5 minutes.
- Add the onion and pepper and cook until tender, about 5 minutes.
- Add the garlic and cook until fragrant, about a minute.
- Add the broth, BBQ sauce, tomatoes, bacon, and pasta, bring to a boil, reduce the heat and simmer until the pasta is cooked, mixing every few minutes.
- Mix in the green onions, sprinkle on the cheese, cover and let it melt before enjoying!
