BBQ chicken pizza is one of my favourites and I enjoy using its flavour in other dishes, like in this BBQ chicken noodle soup! This recipe starts out as a pretty simple chicken noodle soup recipe, replacing the celery with bell peppers, and adding BBQ sauce, tomatoes, beans, corn, green onions and cilantro. I usually serve the soup topped with cheese and sometimes like to add other flavours from BBQ pizza such as bacon, pickled banana peppers, pineapple, and/or fresh diced red peppers! No matter how you make it, this BBQ chicken noodle soup is sure to please!
BBQ Chicken Noodle Soup
A chicken noodle soup inspired by BBQ chicken pizza!
ingredients
- 1 tablespoon oil
- 1 cup onion, diced
- 1 cup carrot, diced
- 1 cup bell pepper, diced
- 2 cloves garlic, chopped
- 6 cups chicken broth (link)
- 1 pound boneless skinless chicken breasts or thighs
- 1 (15 ounce) can diced tomatoes
- 2 (15 ounce) cans beans, drained and rinsed
- 1/2 cup BBQ Sauce (link)
- 1 teaspoon oregano
- 8 ounces pasta (gluten-free for gluten-free)
- 2 cups corn (fresh, frozen or canned)
- 2 green onions, sliced (optional)
- 2 tablespoons cilantro, chopped (optional)
- salt and pepper to taste
directions
- Heat the oil in a large saucepan over medium-high heat, add the onion, carrot and bell pepper, and cook until tender, about 8-10 minutes.
- Add the garlic and cook until fragrant, about a minute.
- Add the broth, chicken, diced tomatoes, beans, bbq sauce, and oregano, bring to a boil, reduce the heat and simmer until the chicken is cooked through, about 20 minutes, before removing the chicken and shredding or slicing it.
- Add the pasta and cooked chicken, bring to a boil, reduce the heat and simmer until the pasta is tender, about 10 minutes.
- Add the corn, green onions, and cilantro, season with salt and pepper to taste and enjoy!
Option: Dice the chicken, fry it in oil and set aside before starting on step 1. (Skip the simmer time in step 3.)
Option: Add 4 slices bacon, cooked and crumbled.
Option: Add 4 ounces cream cheese, at the end, let it melt into the broth.
Option: Add 1/2 cup heavy/whipping cream, at the end.
Option: Add 1/2 cup sour cream, at the end.
Option: Add sliced pickled banana peppers at the end.
Option: Add diced pineapple at the end.
Option: Add 1/4 cup fresh diced red onion at the end.
Option: Serve garnished with shredded cheddar cheese.
