Blue cheese is a food that I don’t use nearly often enough and this sausage and pea pasta is a great way to enjoy it! This recipe is such a simple one, you cook the sausage, add cream, and melt the blue cheese into it before adding the peas and pasta! For some reason I think about peas in the spring so this is the time of year that I like this recipe! If you are not a fan of blue cheese you can easily replace it with another cheese, such as parmesan or asiago.
Creamy Blue Cheese Sausage and Peas Pasta
A quick and easy creamy blue cheese pasta with sausage and peas!
ingredients
- 12 ounces pasta (gluten-free for gluten-free)
- 1 tablespoon oil
- 1 pound Italian sausage, casings removed
- 1 onion, diced
- 1 cup heavy/whipping cream
- 1/2 cup blue cheese (such as gorgonzola dolce), crumbled
- 1 cup peas
- salt and pepper to taste
- 2 tablespoons parsley, chopped (optional)
directions
- Start cooking the pasta as directed on the package.
- Meanwhile, heat the oil in a large pan/skillet, add the sausage and onion, and cook, breaking the sausage apart as it cooks, before draining any excess grease.
- Add the cream, bring to a boil, reduce the heat and simmer for a few minutes.
- Add the cheese and let it melt.
- Add the peas and heat.
- Season with salt and pepper to taste and mix in the parsley.
- Drain the pasta, reserving some of the water, add the pasta to the sauce, mix, and optionally add some of the reserved cooking water to get the sauce to the desired consistency
Option: Replace the sausage with bacon.
Option: Replace the peas with spinach, broccoli, asparagus, etc.
Option: Replace the blue cheese with parmesan for an alfredo sauce version.
Option: Replace the parsley with basil.
Option: Add lemon zest or a splash of lemon.
This appears to be a quick, easy, and satisfying meal option, especially during the spring when thoughts of fresh peas come to mind. I can imagine it being a delightful dish to enjoy with family and friends.
