Curried Chicken and Mango Salad Sandwich

Ever since I made the chicken salad sandwich I had been wanting to try a curried version. I like curry in all forms and I like to try experimenting by adding curry to new dishes. Mango chutney is one of my new favorite condiments and I was thinking that a curried chicken and mango salad sandwich would be perfect. This sandwich was a pretty easy to make and it tasted great! It was nice and creamy with bursts of juicy sweet mango. The whole sandwich was enveloped in a warm aroma of curry and it was filled with curried goodness. The mango chutney and curry powder added the perfect level of heat.

Curried Chicken and Mango Salad Sandwich

Prep Time: 30 minutes Cook Time: 1 hour Total Time: 1 hour 30 minutes Servings: 4
ingredients
  • 1 cup cooked chicken
  • 1 small mango (peeled, stoned and cut into bite sized pieces)
  • 1 green onion (chopped)
  • 2 tablespoons mayonnaise
  • 1 teaspoon curry powder
  • 1 tablespoon mango chutney (optional)
  • salt and pepper to taste
  • 2 slices of bread (optionally toasted)
directions
  1. Mix everything but the bread in a bowl.
  2. Assemble sandwich.

    I love sandwiches for those nights I don’t really feel like cooking. I’ve never tried a curried chicken sandwich though. I’ll have to put it on my “to make” list.

    I would have never tied putting mango and curried chicken together. Looks really good. Have you tried grilling chicken and putting them into pitta bread with minted yogurt? Sooooo gooooood!
