I have been meaning to try couscous for a while now. On the weekend I picked up instant whole wheat couscous though I was not sure exactly what I was going to do with it. Of course when I looked in my fridge I had all of the ingredients required for a Greek salad so I decided to do a Greek couscous salad. It was pretty much just a Greek salad with couscous, though this time I pitted the olives and chopped them up. The couscous was pretty simple to make; just add some boiling water and let it sit for 5 minutes. The couscous had a nice texture and soaked up all of the excess dressing. I think I will enjoy experimenting with couscous in the future.

- 1/2 tablespoon olive oil
- 1/2 tablespoon red wine vinegar (or lemon juice)
- 1 dash oregano
- salt and pepper to taste
directions

This looks delicious. I’ll remember this one next time I’m feeling like “Greek” (which is often).
I love couscous! I can eat it instead of rice or pasta for most meal.. This recipe sounds so easy and lovely!
Great dish…couscous IS great for absorbing flavours.
This is pretty much my lunch 2-3 times a week. LOL. I love couscous salads, and I also like to make similar cold salads with barley and orzo. Looks great!
Very happy to have found your blog. Thanks for all of the inspiring recipes.
Lovely salad. Fresh mint is nice to throw in too.How was the whole wheat cous cous? not too heavy?
I make this dish too Kevin! It’s very easy and tasty. The only difference is that I cut my veg small. Thanks for reminding me of this 🙂
I love all things Greek so why not couscous. Thanks for the recipe Kevin!!
Mint sounds like it might be nice. I did not find the whole wheat couscous to be heavy though I have not had non-whole wheat couscous to compare it to.
Couscous is my go to ingredient whenever I am looking for a quick, flavourful fix.
I Googled this recipe yesterday and came across your page. I made this and it was so delicious. I made the veggies smaller but the flavors are great. Thanks
