Lemon Roasted Potatoes

What better to accompany lemon roasted chicken than some lemon roasted potatoes? You can even cook them in the same dish at the same time. You can also make these potatoes when you are not roasting chicken. They are pretty simple to make and really tasty.

Lemon Roasted Potatoes

Prep Time: 15 minutes Cook Time: 1 hour Total Time: 1 hour 15 minutes Servings: 6
ingredients
  • potatoes (cut into bite sized pieces)
  • olive oil
  • lemon (juice and zest)
  • oregano
  • salt and pepper
directions
  1. Toss the potatoes in the olive oil, lemon juice, oregano, salt and pepper.
  2. Bake the potatoes in a preheated 350F/180C oven until tender, about an hour.

    OMG these are so simple , yet i;ve never tried this . It would be gr8 just by itself with some nice bread drizzled with olive oil. Yum … have to make these.

    That is really a mouth-watering photo! I will have to try these, but may have to go really light on the lemon since my hubby tends to not like strong citrus flavors.

    I am almost embarassed to admit how often we eat potatoes just like this, Kevin. They are so good! I usually add a little chicken broth to mine, too.

    You’re right it goes well with chicken. I usually make similar potatoes to go with greek chicken and greek salad. So delicious.

    The potatoes look as beautiful as the chicken! I roast mine together with thick slices of onion and whole heads of garlic. The garlic roasts and turns into a wonderful, squishy spread for the chicken and potatoes. Lol! It’s two in the morning and I could go for some chicken!

    The only time I ever have lemon Potatoes is when we go out one of our favorite Greek restaurants. I don’t know why I have never made them at home. I WILL NOW!!

    I love lemon roasted vegetables, you can do it with almost any veggie you like and it comes out delish. I have a recipe for lemon roasted asparagus and broccilini on my blog. Its so simple and easy. You can also take out some of the fat by using Pam instead of olive oil. I can’t wait to try these too.
