Quinoa Fruit Salad with Yogurt

I recently came across a new way to enjoy quinoa, as the base for a fruit salad . It is pretty simple to make. You just need some cooked quinoa, some yogurt, fruit, nuts and maybe some honey. Cooked quinoa keeps well in the fridge so if you make some extra you will have some on hand to enjoy whenever you want without having to wait 20 minutes to cook it. You can use whatever fruit that is available at the time. I had just come across some blood oranges and I threw them in along with some blueberries, kiwi and a banana. The quinoa fruit salad was a light and tasty treat.

Quinoa Fruit Salad with Yogurt

Prep Time: 5 minutes Cook Time: 20 minutes Total Time: 25 minutes Servings: 2
ingredients
  • 1 cup quinoa
  • 2 cups water
  • yogurt
  • fruit
  • nuts
  • honey
directions
  1. Rinse the quinoa.
  2. Bring the quinoa and water to a boil, reduce the heat and simmer until tender, about 20 minutes.
  3. Let the quinoa cool and assemble the salad.

    This looks nice and light. I just found fresh blood oranges for the first time, but don’t know what to do with them…perhaps something easy but special like this.

    It is interesting how we categorize certain foods. I always think of quinoa as a savory lunch/dinner food yet I make flaked quinoa for breakfast in the form of porridge and also bake with flaked quinoa (muffins & scones). It never occurred to me to use quinoa as a fruit/yogurt salad. A nice change of pace and a must try!

I picked it up because everyone’s been talking about it lately but I haven’t been able to decide what to do with it. Your salad looks great. I *love* blood oranges.
