Tzatziki is a greek style sauce made with yogurt, cucumber, garlic, lemon, and dill; it’s cool, creamy and oh so good! This is a slightly different take on it using zucchini instead of cucumber. You could make a zucchini tzatziki using fresh shredded zucchini but this dip uses roasted zucchini that’s pureed into the yogurt along with all of the other ingredients. This recipe is as simple as roasting the zucchini and finishing in the food processor! You can use this as a dip for chips, crackers, vegetables, etc, or as a sauce in sandwiches, etc.


Roast Zucchini Tzatziki Dip
A roasted zucchini dip in tzatziki style with greek yogurt, garlic, lemon, and plenty of fresh dill.
ingredients
- 4 medium zucchini, cut into 1/2 inch slices
- 1 tablespoon olive oil
- salt and pepper to taste
- 1 cup plain Greek yogurt
- 1/4 cup feta, crumbled (optional)
- 2 cloves garlic, minced/grated
- 1 tablespoon dill, chopped
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
directions
- Toss the zucchini in the olive oil, salt and pepper, arrange in a single layer on a baking pan and roast in a preheated 400F/200C oven until tender and lightly charred, about 30-40 minutes, flipping half way through.
- Puree everything in a food processor until the desired texture and enjoy!
