I had seen a few recipes for berry oatmeal bars such as this recipe for strawberry oatmeal bars that looked really good. The strawberry and rhubarb jam was calling to me and I could not resist using it along with some fresh strawberries in some oatmeal bars. The strawberry and rhubarb oatmeal crumble bars were really easy to make and taste great! The only problem that I had was that the bars crumbled easily and did not come out of the pan looking much like bars. Though I did not realize it before making it, the oatmeal crumble recipe was really similar to the topping that I often use on my crumbles and crisps. In fact the strawberry and rhubarb oatmeal crumble bars tasted almost exactly like a strawberry and rhubarb crumble only with a higher ratio of crumble to filling. I think I might have to try one warm with some vanilla ice cream.

You have been going strawberry-crazy lately. I’m loving it!!
Kevin, you read my mind. I was just thinking of creating something like this. It looks so tasty.
looks great. strawberry and rhubarb are a perfect combination.
Sorry to hear it didn’t keep together, but it looks that much more delicious. I took my less formed bars and crumbled them over some Greek yogurt with a handful of fruit in the morning. Either way, you can’t go wrong with home-made! They look great!
Despite not keeping together, those bars look fantastic to me!! Yum!!
I’m gonna love the crispy-ness of it! it looks fab!
I think the things that don’t take the prettiest pictures often taste best! Gotta love strawberry season!
Though it didn’t stay together to well, they still look fantastic! I’d totally have one!
Yeah, I think the warmth plus the ice cream should be mandatory for such luscious bars 🙂
I agree with everyone else, crumble them with yogurt, ice cream or in your hand … oatmeal bars are the best 🙂
Kevin this Crumble bars look absolutely delicious! Please I want one to Breakfast!! Gloria
Those crumble bars look delicious! These are the types of snacks I never make unless I have lots of people to feed it to because its one of those things that can be eaten in one sitting.
I love oatmeal used this way, looks so good!
mmmmm, your crumble bars look positively heavenly! Such a fabulous idea! I definitely vote for the “warm with vanilla ice cream” version… 🙂

Mmmm … so healthy and delicious! 🙂
It’s hard to keep crumble bars together. I like the looks of yours anyway and the more crumbly, the more I want to eat with ice cream!
Happy Canada Day Kevin!
i can’t believe you made this. i know oatmeal bars are do-able at home but i always think you can only get them at the store. i think otherwise now. this is top-notch!!
love it.
Not that I’m complaining, but are you being sponsored by the Canadian Strawberry Farmers’ Association?!
These look delicious! Crumble makes anything nicer…:)
What a great way to use all the fresh strawberries blending them with Rubarb, yogurt or ice cream!! I am all about the crumble – Big deal that they did not stay together – that is why forks were invented…
Cheers

Kevin, this looks so nice! I make oatmeal bars pretty often, using all kinds of preserves and jams – whatever I have in my kitchen:)
Strawberry sounds like a good idea, too! Yum!
You came up with a great recipe. With all of you strawberries posts I really have to go strawberry picking.
This is so easy! I can’t believe I haven’t made something like this before. It looks great even if it falls apart. Thanks for the inspiration as usual.
Just perfect for summer breakfast!
awesome dessert, kevin! you need to help me satisfy my sweet tooth more often! 🙂
mmmm.that looks sooooo good…you must have recently stocked up on strawberries! Love it!
The crumble looks perfect and I love pecans in it.Simply fanatastic.
These look divine!! I wonder if there is a sugar free version as I have a sugar intolerance.
oh my – this is so my kind of bar. lovely kevin!
I would love to have this with a cup of coffee for breakfast. It looks delicious!!
I just made these last night..GREAT! didnt have strawberry jam, so I used blackberry, and pressed the crust really firmly into the bottom of the pan, after it was done left it in the fridge and they hold their shape..Great way to use frozen berries
You are a recipe soul mate. I'm book marking this page. Thanks!
I made these last night and i found the same problme with it not staying together. I think it was just not enough moisture in the mix. What i did when i took it out was drizzle 1/4 cup of butter over the tope and then popped it back in for five minutes and it turned out PERFECTLY!
I just made these yesterday, and they are FANTASTIC! Mine did actually come out quite well as bars. I didn't have pecans on hand, so my dough was probably not as crumbly as yours. I also let them cool completely before I cut them.
Found this recipe with a Google search for strawberry bars – so glad I found it!
