Strawberry Oatmeal Crumble Bars

I had seen a few recipes for berry oatmeal bars such as this recipe for strawberry oatmeal bars that looked really good. The strawberry and rhubarb jam was calling to me and I could not resist using it along with some fresh strawberries in some oatmeal bars. The strawberry and rhubarb oatmeal crumble bars were really easy to make and taste great! The only problem that I had was that the bars crumbled easily and did not come out of the pan looking much like bars. Though I did not realize it before making it, the oatmeal crumble recipe was really similar to the topping that I often use on my crumbles and crisps. In fact the strawberry and rhubarb oatmeal crumble bars tasted almost exactly like a strawberry and rhubarb crumble only with a higher ratio of crumble to filling. I think I might have to try one warm with some vanilla ice cream.

Strawberry Oatmeal Crumble Bars

Strawberry Oatmeal Crumble Bars

Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40 minutes Servings: 24
ingredients
  • 3/4 cup butter (melted)
  • 1 cup brown sugar
  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 1/2 cups rolled oats
  • 1 cup pecans (chopped)
  • 1/4 cup of strawberry rhubarb jam or strawberry jam
  • 1/2 pound strawberries (sliced)
directions
  1. Mix the butter into the brown sugar, flour, baking soda, salt, cinnamon, rolled oats and pecans until it resembles a coarse meal.
  2. Press 2/3 of the mixture into the bottom of an 8×8 inch baking pan.
  3. Spread the jam on top.
  4. Place the strawberries on the jam.
  5. Crumble the remaining oat mixture on top.
  6. Bake in a preheated 350F/180C oven until golden brown, about 30 minutes.

    Sorry to hear it didn’t keep together, but it looks that much more delicious. I took my less formed bars and crumbled them over some Greek yogurt with a handful of fruit in the morning. Either way, you can’t go wrong with home-made! They look great!

    Those crumble bars look delicious! These are the types of snacks I never make unless I have lots of people to feed it to because its one of those things that can be eaten in one sitting.

    What a great way to use all the fresh strawberries blending them with Rubarb, yogurt or ice cream!! I am all about the crumble – Big deal that they did not stay together – that is why forks were invented…

    I just made these last night..GREAT! didnt have strawberry jam, so I used blackberry, and pressed the crust really firmly into the bottom of the pan, after it was done left it in the fridge and they hold their shape..Great way to use frozen berries

    I made these last night and i found the same problme with it not staying together. I think it was just not enough moisture in the mix. What i did when i took it out was drizzle 1/4 cup of butter over the tope and then popped it back in for five minutes and it turned out PERFECTLY!

    I just made these yesterday, and they are FANTASTIC! Mine did actually come out quite well as bars. I didn't have pecans on hand, so my dough was probably not as crumbly as yours. I also let them cool completely before I cut them.

    Found this recipe with a Google search for strawberry bars – so glad I found it!
