Roast Turkey Sandwich with Cranberry Sauce

One of my favourite parts of the Thanksgiving dinner has to be enjoying the leftovers for the rest of the week and in particular the turkey leftovers. The first thing that I do with the leftover breast meat is make a roast turkey sandwich and it always includes a healthy hit of cranberry sauce! There is just something magical about the combo of turkey, cranberry sauce, mayonnaise, crisp lettuce and juicy tomatoes and I am hopelessly addicted to it. Over the last week I have enjoyed a number of these sandwiches and for a few of them I decided to play around a bit by making them more like turkey club sandwiches by adding bacon, or in this case peameal bacon. You really cannot go wrong adding bacon to anything and in this sandwich it pairs particularly well with the sweet and tart cranberry sauce.

Ingredients
  • 2 slices bread or a bun, optionally lightly toasted
  • 2 slices roast turkey breast, warm
  • 1 tablespoon cranberry sauce
  • 2 slices tomato
  • 1 leaf lettuce
  • 1 tablespoon mayonnaise
  • 2 strips bacon, cooked (optional)
Directions
  1. Assemble the sandwich and enjoy!

Why I did not think of that?? :) We had some kind of turkey stew from leftovers today... nice but you sandwich looks much better... well, next year I will try to remember!

Our favourite leftover turkey sandwich is turkey, mayo, cranberries, stuffing, AND gravy! My god, it is a heart attack awaiting to hit me but oh so good. Sadly we didn't have turkey this year.

I did enjoy a secret sandwich of rare beef tenderloin on bread pmoistened with the port balsamic reduction sauce this afternoon while Paul napped! LOL

My favorite leftover sandwich is turkey, mashed potatoes, collard greens, gravy, and cranberry sauce on a day-old roll. I thought tamales, chili verde and adobo was a good Christmas dinner, but you just made me realize I missed out on my sandwich!

Omigod, this sounds wonderful! The nice mix of sweet and savory reminds me of a bacon, marmalade and pumpernickel sandwich I make, also to die for.
