Burrito Bowls

Burritos are one of my favorite Mexican dishes and they were on the top of my list of things to do with the tequila lime grilled chicken breasts but I was feeling a little lazy and decided to go with a deconstructed burrito or a burrito bowl instead. A burrito bowl is just what it sounds like; all of the contents of a burrito piled on top of each other in a bowl rather than wrapped up in a tortilla. Every once in a while I like to go with the burrito bowl rather than a burrito and when you make them by yourself you can control both the portion size and exactly what goes in it so you can keep it nice and light and healthy without compromising on flavour. For this burrito bowl I started with a base of cilantro lime rice made with a brown rice, some creamy and spicy seasoned black beans, a fresh pico de gallo and of course the tequila lime grilled chicken. I finished the burrito bowls off with a dollop of light sour cream and a touch of grated jack and cheddar cheese for that extra hit of flavour.

Burrito Bowls

(makes 2 servings)
Printable Recipe

1 cup cilantro lime rice (warm, I used brown rice)
1/2 cup seasoned black beans
1/2 cup pico de gallo
1 tequila lime grilled chicken breast (sliced and divided)
1/4 cup jack and cheddar cheese (shredded)
2 tablespoons sour cream (optional)
1 handful cilantro (chopped)

1. Assemble and enjoy.

I often end up unwrapping the burito and just eating the guts anyway, so this recipe saves that step!

Yum! I'd probably use a different marinade for my chicken on account of hating tequila, but I love anything burrito.

And I was just on a forum where someone mentioned that they'd come online almost two hours ago to find a kimchi recipe and hadn't yet searched for one--I was happy to be able to direct them your way without even thinking :)

I make something very similar to this but I call them "rice bowls" not as creative! I pile: brown rice, black beans, my fresh salsa, avocado, onion and cheese. Sometimes a little sour cream if I happen to have some. It is my favorite summer time meal!!

This bowl reminds of a place called Yumm Cafe here in Oregon. It has many of the same ingredients with an additional sauce called Yumm sauce. If you ever find yourself in these parts I highly recommend a Yumm bowl, though it seems as if you created your own yum bowl already:)

I almost always order my "burrito" as a bowl! Much easier to handle, especially for a messy eater like me. I've thought about making them at home from time to time, thanks for the reminder!
