This is basically a fruity take on the classic honey mustard dressing that adds fresh peaches! Whether you are using this peach honey dijon balsamic vinaigrette on a regular everyday salad or a special salad it definitely will take it to the next level!

Peach Honey Dijon Balsamic Vinaigrette

Servings: 16(~1 cup or 16 1 tablespoon servings)

A summery fresh peach honey dijon vinaigrette with white balsamic vinegar that is perfect on any salad!


ingredients
  • 2 peaches, diced
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons white balsamic vinegar (or cider vinegar)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon tamari or soy sauce
  • 1 clove garlic, minced
  • salt and pepper to taste
directions
  1. Puree everything in a food processor or blender until smooth.

Option: Grill the peaches after slicing them in half!

I highly recommend grilling the peach halves first. Grill skin side down, turn, and grill cut side down until distinctive grill marks (caramelizing the sugars) appear. After removing from the grill Immediately pull the skin off, it slips off easily, and dice.
