I always enjoy making my own salad dressings! Not only is it easy to do but you have complete control over what goes into them and how much to make. If you feel like having a different dressing every night of the week you can make a small batch and if you want the same one all week you can make a large batch. One of my favourite dressings to make at home is the balsamic vinaigrette which is so easy to make and always better than store bought. The other day I was thinking about a strawberry salad with a balsamic vinaigrette and an idea hit; I could get even more strawberries into the salad by adding them right to the dressing and to get every last drop of flavour from the strawberries, I could roast them first! Although this dressing takes a bit longer to make with roasting the strawberries, it is still really simple and it is so worth it! Strawberries and balsamic vinegar are great together and even better when combined in this roast strawberry balsamic vinaigrette! Next up is the salad that I used it on.

This looks great, I just brought home tons of ripe strawberries from the farmer's market last weekend so I'm all set! The contrast of the sweet strawberry with the bite of the balsamic and mustard sounds irresistible.
What a refreshing idea. Sounds so summery and delicious.
I just made this dressing after purchasing a few pints of very sweet strawberries today. This was my first time roasting strawberries and making a dressing with them. This is a remarkable flavor combination! I look forward to several more batches of this and sharing this recipe with friends. Thanks for posting!
I like to make my own salad dressing too. In fact, I don't think I've bought a bottled dressing in years. What a great way to use the delicious strawberries that are so abundant right now! Thanks for the great idea!
Wow, I really have to try this one 😀 Are you using a light or a dark balsamic vinegar?
I made this the other night and had it with the chicken salad you recommended. So delicious! Keeping with the salad theme, I made a jerk salmon salad today with bits of pineapple, avocado, and red peppers. I didn't have quite enough dressing so I added a splash of lime juice and it's really good!

How long will this keep in teh fridge? Do you think it would still taste okay if I omitted the salt? I'm looking for a no-sodium alternative.
Kevin, this sounds just amazing! You have inspired me. Usually I just want to shove those strawberries in my mouth, no time for roasting. 🙂
mkamye: This will keep in the fridge for a few days but I would not go for longer than a week.
I have a strawberry vinaigrette recipe that i LOVE but i never thought of roasting the berries, sounds delicious!!
having a little trouble getting a good balance of the strawberries in the balsamic….too much of something….i cut it with lemon….and added dijon…..
I'm curious about maybe using frozen strawberries to make this. After thawing, maybe? Or would they be too mushy?

Melissa: Frozen strawberries would probably be too mushy to roast but you could make the dressing with them unroasted.
OMG this sounds DELISH!!!
This is perfect for my summer salads! Now if only you could help me make an apple balsamic dressing … I can't seem to find one anywhere!
I found your website accidentally and so glad I did! I love your recipes…
I never thought of roasting strawberries, I am going to give this a go.
Agree with you about ingredient control. I am not a fan of garlic in salad dressing since it clashes with fruit and most of my salads have fruit
.
I like to make my own salad covering also. In reality, I don't believe I have bought a bottled dressing in time. What a huge way to use the tasty strawberries that are so rich accurate now! Thanks for the huge plan!
Great dressing! Show your affinity for grammar as well and correct the name to ROASTED STRAWBERRY DRESSING or change it to Carmelized Strawberry Dressing. Thanks, Sandy!
What kind of salad due to put that on?
Sounds Delicious!
