Roast Strawberry Balsamic Vinaigrette

A homemade balsamic vinaigrette with roasted strawberries.

I always enjoy making my own salad dressings! Not only is it easy to do but you have complete control over what goes into them and how much to make. If you feel like having a different dressing every night of the week you can make a small batch and if you want the same one all week you can make a large batch. One of my favourite dressings to make at home is the balsamic vinaigrette which is so easy to make and always better than store bought. The other day I was thinking about a strawberry salad with a balsamic vinaigrette and an idea hit; I could get even more strawberries into the salad by adding them right to the dressing and to get every last drop of flavour from the strawberries, I could roast them first! Although this dressing takes a bit longer to make with roasting the strawberries, it is still really simple and it is so worth it! Strawberries and balsamic vinegar are great together and even better when combined in this roast strawberry balsamic vinaigrette! Next up is the salad that I used it on.

Roast Strawberry Balsamic Vinaigrette

Roast Strawberry Balsamic Vinaigrette

Prep Time: 5 minutes Cook Time: 20 minutes Total Time: 25 minutes Servings: 1cup

A homemade balsamic vinaigrette with roasted strawberries.

ingredients
  • 1 cup strawberries
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 1 large clove garlic, finely chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
directions
  1. Place the strawberries in a single layer on a baking pan lined with foil folded up on the sides to capture the juices.
  2. Roast the strawberries in a preheated 425F/220C oven until they start to caramelize, about 15-20 minutes.
  3. Puree everything in a food processor until smooth.

    This looks great, I just brought home tons of ripe strawberries from the farmer's market last weekend so I'm all set! The contrast of the sweet strawberry with the bite of the balsamic and mustard sounds irresistible.

    I just made this dressing after purchasing a few pints of very sweet strawberries today. This was my first time roasting strawberries and making a dressing with them. This is a remarkable flavor combination! I look forward to several more batches of this and sharing this recipe with friends. Thanks for posting!

    I made this the other night and had it with the chicken salad you recommended. So delicious! Keeping with the salad theme, I made a jerk salmon salad today with bits of pineapple, avocado, and red peppers. I didn't have quite enough dressing so I added a splash of lime juice and it's really good!

    How long will this keep in teh fridge? Do you think it would still taste okay if I omitted the salt? I'm looking for a no-sodium alternative.

    having a little trouble getting a good balance of the strawberries in the balsamic….too much of something….i cut it with lemon….and added dijon…..

    Melissa: Frozen strawberries would probably be too mushy to roast but you could make the dressing with them unroasted.

    I never thought of roasting strawberries, I am going to give this a go.

    Agree with you about ingredient control. I am not a fan of garlic in salad dressing since it clashes with fruit and most of my salads have fruit
    .

    I like to make my own salad covering also. In reality, I don't believe I have bought a bottled dressing in time. What a huge way to use the tasty strawberries that are so rich accurate now! Thanks for the huge plan!
