After discovering the greatness of roasted garlic I though that I would have to try it in what is one of my favorites snacks, hummus. Hummus is a nice and versatile dip that you can add pretty much any flavour to and I thought that roasted garlic hummus would be a tasty treat. The roasted garlic hummus turned out to be pretty good! The sweetness of the roasted garlic went really well in the creamy hummus. The roasted garlic hummus disappeared quite quickly and I will have to make some more soon.
Roasted Garlic Hummus
ingredients
- 1 (19 ounce) can chickpeas
- 1 head roasted garlic
- 2 cloves garlic
- 1/4 cup tahini
- 1/2 lemon (juice)
- olive oil to taste
- salt and pepper to taste
- parsley to taste (chopped, optional)
directions
- Puree everything in a food processor until smooth. Add some water (or more olive oil) to bring it to the consistency that you like.
- Serve garnished with chopped parsley and olive oil to taste.

Thank you, you’ve just given me one of those Duh! smacks forehead moments. I’ve become intolerant to raw garlic in my middle age, which is annoying, but cooked doesn’t upset me for some reason. I’m sure there are many dishes like this, where normally raw garlic is used and that I could substitute roasted.

Mmmm–this sounds so good! I have a jar of tahini that’s been in my pantry for way too long, and I’ve been shying away from it because I haven’t wanted to try to figure out whether it’s still good or not. I think that I’m now going to have to take the plunge and find out.

Hi, I've recently made this and it was WAY too much garlic for the amount of hummus it made. I took a bite, and my mouth was on fire. I couldn't eat it. A shame!

Around here, I am called "the Garlic King". I put garlic in or on everything I eat.
My local grocery store sells a roasted garlic hummus by a company called Sabra. I then finely chop 2-3 (depending on size) cloves of raw garlic and mix into the hummus. I then spread it on bread, or use to dip raw veggies.
I also eat garlic raw and drink it down with apple cider vinegar.
I haven't had a "put-me-on-my-butt-for-a-week cold" since 2001.
Garlic is King, and so is hummus!!
