I like to keep recipes for quick and easy appetizers for entertaining or bringing to potlucks on hand over the holidays and bean dips like this roasted garlic and parmesan white bean dip fit the bill perfectly! Bean dips are as easy to make as pureeing the beans along with some extra flavours and/or seasonings in a food processor! You can easily throw it together at the last minute and be ready for entertaining or heading out the door! This is a white bean dip with mellow roasted garlic, parmesan cheese and rosemary along with a hint of lemon! It’s such a simple flavour combination and yet such a good one! Another great thing about bean based dips like this is that they are light and healthy in addition to being tasty, quick and easy, perfect for a New Years Eve party after all of the heavy holiday feasting!
Roasted Garlic and Parmesan White Bean Dip
An easy white bean dip with parmesan, rosemary and roasted garlic!
ingredients
- 2 (15 ounce) cans cannellini beans, rinsed and drained
- 6 cloves roasted garlic
- 1/4 cup parmigiano reggiano (parmesan cheese), grated
- 1 tablespoon rosemary, chopped
- 2 tablespoons lemon juice
- salt and pepper to taste
- olive oil to taste
directions
- Puree everything in a food processor adding as much olive oil as needed to get it to the desired consistency!
Option: Replace the roasted garlic with or 2 cloves minced/grated fresh garlic!
Option: Add a pinch of cayenne pepper for a touch of heat!
Option: Serve topped with a drizzle of olive oil and/or chopped parsley!

I use pitas that I cut into long triangles, brushed with olive oil and toasted.

HOW MANY CLOVES OF GARLIC IN TOTAL DO YOU USE?
I SEE CLOVES ON TOP OF THE DIP IN THE PICTURE.

The recipe uses 6 cloves of garlic. I roast a whole head of garlic, throw 6 into the dip and the rest on top as garish. Enjoy!
