Mother’s Day is this weekend and it’s the perfect opportunity to treat mom with a special and yet super easy to make white chocolate lava cake! These cakes bake up nice and light and fluffy on the outside and stay liquid-y and smooth on the inside, just erupting with melted chocolate when you cut into them! These cakes may look a little intimidating to make but they are so easy! You simply mix the five ingredients and bake! It only takes a few minutes of baking and you can easily see when they are done as the top will look like it is just setting and it will only jiggle a little when you shake it. This Mother’s Day, show mom a little of how much you appreciate her with these white chocolate molten cakes!
White Chocolate Lava Cakes
Light and fluffy white chocolate cakes with a velvety smooth and creamy molten lava centre!
ingredients
- 3 1/2 ounces (100g) white chocolate
- 1/2 cup (1 stick) butter
- 1 cup sugar
- 6 tablespoons flour (rice flout for gluten-free)
- 4 eggs
directions
- Melt the chocolate into the butter, remove from heat, mix in the sugar, flour and eggs.
- Divide the batter between 3-4 buttered ramekins and bake in a preheated 425F/220C oven until until the sides are lightly golden brown and the middle of the top jiggles just a little, about 10-13 minutes, before letting cool for 1 minute, running a knife around the outside, inverting and sliding out onto a plate to enjoy while still hot!

Judy – I've figured out that the raspberry sauce is a mistake. I believe the recipe was "cut and pasted" from the raspberry lava cake, and they simply forgot to delete the reference in the "directions" part of this recipe. so ignore it, and all should be well.
