Huevos Rancheros Breakfast Sandwich

Huevos Rancheros Breakfast Sandwich
I have been thinking about brunch menus with Mother's Day coming up and with Cinco de Mayo just past I naturally combined the two to make these huevos ranchers style breakfast sandwiches. These breakfast sandwiches include all of the ingredients and flavour of huevos rancheros including refried beans, guacamole and salsa ranchera in addition to fried eggs. Even if you are not a cook, these huevos rancheros breakfast sandwiches are super easy to make and take little time but mom is sure to enjoy them and appreciate the effort! Just make sure to wipe the dribbling egg yolk from your chin before brining mom her breakfast in bed and I swear that I won't tell her that you inhaled several before brining her hers!
