Buffalo chicken wings are wings that are covered in a hot sauce and often served with a blue cheese or ranch dipping sauce along with carrot and celery sticks and this is a take on those flavours in meatloaf form! Chicken is the obvious meat to use but you could also use turkey ,or beef, or even pork. Because ground chicken can be a little on the dry side I like to add shredded zucchini, which helps keep it nice and moist. The carrot and celery are shredded and diced finely and mixed right into the meatloaf along with a nice amount of hot sauce! Extra seasonings include onions, garlic, cheddar cheese, ranch seasonings, Worcestershire sauce, and dijon mustard. The recipe is as easy as mixing all of the ingredients and baking it! You can either bake it in a loaf pan or just shape it as desired on a baking pan.
Buffalo Chicken Meatloaf
All of the flavours of buffalo chicken wings in an easy to make chicken meatloaf!
ingredients
- 2 pounds ground chicken (or turkey, or pork, or beef)
- 1/2 cup zucchini, shredded
- 1/2 cup onion, grated
- 1/2 cup carrot, grated
- 1/2 cup celery, finely diced
- 3 cloves garlic, grated/minced
- 2 green onions, thinly sliced
- 2 eggs
- 1/2 cup buffalo hot sauce (or to taste)
- 1 cup breadcrumbs (gluten-free for gluten-free)
- 1 cup cheddar cheese, shredded (or cubed) (optional)
- 1 tablespoon ranch seasoning *
- 1 tablespoon Worcestershire sauce (gluten-free for gluten-free)
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
directions
- Mix everything well and either place it into a 9×5 inch loaf pan or shape it as desired on/in a baking pan.
- Bake in a preheated 350F/180C oven until the chicken is cooked through, 165F, about 60 minutes.
- Enjoy!
Option: * Store bought or make your own with: 1 teaspoon dried parsley, 1 teaspoon dried chives, 1 teaspoon dried dill, 1 teaspoon onion powder, and 1 teaspoon garlic powder.
Option: Wrap in, or cover with bacon before baking!
Option: Add 1/2 cup bacon, chopped (raw) to the meat mixture!
Option: Add 1/2 cup crumbled blue cheese to the meat mixture!
Option: After baking, brush the loaf with more buffalo hot sauce!
