The last time that I came across medjool dates I tried stuffing them with cream cheese and the sweet and savoury combination was really good. Since then I came across the idea of taking it one step further and wrapping the stuffed dates in bacon! You really just can’t go wrong adding bacon to anything and I immediately knew that I would have to try it the next time that I came across some medjool dates. You can stuff the dates with pretty much anything and this time I went with my favorite cheese, gorgonzola and some spicy chorizo sausage. I was also thinking that almonds or even pieces of olives would also make a good date filling. The bacon wrapped stuffed dates are pretty easy to make. You just need to pit the dates, stuff, them, wrap them and then bake them for a few minutes. For the amount of effort these take to make, they are so worth it! The salty bacon wrapping goes so well with the sweet medjool dates! I really enjoyed both the tangy gorgonzola and the spicy Spanish chorizo sausage fillings. These bacon wrapped stuffed medjool dates would make a welcome addition to any party and with them being in season now they would be a perfect appetizer for your Thanksgiving dinner.
Bacon Wrapped Stuffed Medjool Dates
ingredients
- 16 medjool dates
- gorgonzola cheese (or other cheese or chorizo or almonds, etc.)
- 8 slices bacon (cut in half)
directions
- Cut the dates open along one side and remove the pits.
- Stuff the dates with their filling and wrap each in a slice of bacon.
- Place the bacon wrapped dates into a baking pan with the seam of the bacon down.
- Bake in a preheated 425F/220C oven until the bacon is cooked and slightly crispy, about 12-16 minutes, flipping once in the middle.
- Let cool and enjoy.
These bacon wrapped dates are a perfect appetizer for a salty and sweet combination. Love it!
I've always made these with cream cheese or ricotta. I love your idea of some kind of bleu cheese!
I just had something very similar at a great restaurant, and we all raved about how amazing they were. They were stuffed with almonds and served over a bit of salad in an endive leaf. Delicious.
These have to be amazing. Just the other day someone was telling me how they've had a bacon wrapped date before and it was delicious. I'm throwing a holiday party – maybe I'll give them a go 🙂

I wrapped prunes in bacon a few weeks ago and they were amazing! Swapping them out for dates and adding gorgonzola might put me over the edge. And that's not a bad thing…
This is one of my favorite sweet and savory combinations. I have made it with a cube of manchego cheese inside too. Bacon makes everything better!

Yum!! I still haven't ever stuffed dates. It has been on my list forever. I bet these would also work well on the BBQ or with goat cheese.

Instead of dates, I used dried prunes or golden mushrooms (enoki). Yummy!
That looks so good! I always forget to make these for appetizers. Mine are similar, but stuffed instead with roasted almonds and goat cheese and drizzled with a bit of maple syrup. Delicious! It is hard to find decent dates in Indiana, but I can normally get them at Trader Joe's

I really enjoy stuffing dates with goat cheese and wrapping them in prosciutto. A quick broil in the oven and they are a perfect appetizer!
I'm a tad late to post, but I just had to say my honey and I made some of these dishes last night for a party and they were a HUGE hit! We made these, the marinated feta and a flatbread version of the butternut squash/carmelized onions/gorgonzola/sage dish. Delicious!! I'm also prepping to make your pumpkin pie. The crust looks amazing and I'll use any excuse to have some pumpkin leftover to make that french toast!

I was concerned about my bleu cheese being too strong, so I used goat cheese instead. These were DELICIOUS. Great recipe and the timing was perfect.
