Chicken and Mango Guacamole Wrap

I recently came across a post about chicken papaya wraps that looked really good. I liked the sound of the papaya and avocado salsa which sounded a lot like guacamole with papaya to me. Avocados are something that I had been wanting to try using more often and this was the perfect chance. I had some mangoes on hand and I though that a mango guacamole would be tasty. I seasoned the chicken with some freshly ground chipotle chili powder to give it some heat and flavour. The wraps were as easy to put together as blending the guacamole and grilling the chicken. The mango guacamole was a nice combination of cool and creamy with a touch of heat. I really enjoyed it. I also tried the grilled chicken and mango guacamole in sandwich form and it was just as tasty though a bit messier. I look forward to trying the papaya guacamole version.

Chicken and Mango Guacamole Wrap

Prep Time: 10 minutes Total Time: 10 minutes Servings: 1
ingredients
  • 1 chipotle grilled chicken breast (see below)
  • 2 tablespoons mango guacamole (see below)
  • 1 tortilla (gluten free for gluten free)
directions
  1. Assemble and enjoy!

Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes Servings: 1
ingredients
  • 1 mango (peeled and stoned)
  • 1 avocado (peeled and stoned)
  • 1 jalapeno
  • 1 lime (juice)
  • 1 handful cilantro (chopped)
  • salt to taste
directions
  1. Mix everything in a food processor.

Chipotle Grilled Chicken

Prep Time: 10 minutes Cook Time: 5 minutes Total Time: 15 minutes Servings: 1
ingredients
  • 1 tablespoon oil
  • 1 chicken breast
  • chipotle powder to taste
  • salt and pepper to taste
directions
  1. Heat the grill or heat the oil in a pan.
  2. Season the chicken with the chipotle powder, salt and pepper.
  3. Grill the chicken or saute it in the pan until golden brown.

    Wow, sounds marvellous. I love mangos and avocados but my sweetie is not a big fan of either, and of course they aren’t local to this neck of the woods. I’m drooling, though!

    Amazing! Confession: I’m not a fan of guac (since I didn’t grow up with it), but cutting it with mangoes is a great way to go, as I love ’em! 🙂 Very imaginative!

    This is certainly the wrap for me -it has all my favorite flavors from mango & avocado, cilantro, lime and chipotle. This tangy guacamole must really compliment the chipotle chicken. Nice job.

    Mango put advocado sounds like pure brilliance. Amazing how two thing you never think of going together could so easily go together.

    Now all I have to do is find advocados that are worth a damn.

    Sounds awesome! I love guac! If you feel like playing around with the flavors a little, add some chopped garlic to the guac. It adds great flavor and would go great with that chicken, too!

    What a great combo of foods – they compliment eachother so well – you could also use these yummy ingrediants and make wonderful Quesadilla try adding goat cheese too.

    I tried your mango guac and it was a HUGE success! I almost licked the blade in the food processor so as not to waste any of it … but I restrained myself … barely. Had it with some chipotle chicken quesadillas. NumNum. Will be pairing the mango guac with tortilla chips at an upcoming picnic … will let you know if I get rave reviews from the crowd.

    Just made these. Super awesome.

    Made the jalepeno optional and put a tad too much chipotle. But indescribeable hot/cold sensation.

    It may be silly, but I think the rib of lettuce was a good simple addition. Provided structure to the wrap.

    I've made this twice; it's really, really good and very easy to make. The second time I put only half the mango into the guacamole (personal taste since my mangoes were really sweet). I found many ways to use this as a dip and spread. Thanks for the recipe.

    My partner MAKES guacamole with mango every time and I won't eat it any other way! Can't wait to try this in a wrap (probably with a little tomato added, too!) it looks scrumptious!
