Egg salad and egg salad sandwiches are a staple year round and I particularly enjoy them in the summer! An egg salad is usually the simple combination of chopped hard boiled eggs in a simple mayonnaise based dressing. Common additions include: celery, onions, herbs, mustard, paprika, etc. This egg salad is pretty much a regular egg salad with a lot of the mayonnaise replaced with cottage cheese which is lighter, healthier and has more protein. I like to throw it into a sandwich with lettuce and tomatoes and it’s also great served on toast topped with a drizzle of chili crisp/crunch.
Cottage Cheese Egg Salad
A light and tasty egg salad with a lot of the mayonnaise replaced with high protein cottage cheese.
ingredients
- 12 hard boiled eggs, peeled and coarsely chopped
- 1/4 cup celery, finely diced
- 2 tablespoons red onion, finely diced (or green onion)
- 2 tablespoons dill, chopped (or 1 teaspoon dried dill)
- 2 tablespoons chives, chopped
- 1/2 cup cottage cheese
- 2 tablespoons mayonnaise (optional)
- 2 teaspoons dijon mustard
- 2 teaspoons lemon juice (or apple cider vinegar or pickle juice)
- 1/2 teaspoon paprika
- salt and pepper to taste
directions
- Gently mix the chopped eggs with the celery, onions, dill, and chive with the mixture of the cottage cheese, mayo, mustard, lemon juice, paprika, salt, and pepper and enjoy!
Option: Add 2 slices bacon, cooked and crumbled.
Option: Add 2 tablespoon pickle, finely diced.
Option: Add 1 tablespoon chili crisp/crunch.
Option: Replace the cottage cheese with greek yogurt or sour cream or mayonnaise.
Option: Enjoy on toast, in a sandwich, in a wrap, etc, or as a side, or as a dip, etc.
