One of my absolute favourite things to do with asparagus is to make crispy baked asparagus fries, where the asparagus spears are coated in breadcrumbs and baked until crispy, but this year I though that I could do even better by using prosciutto as the crispy coating for the asparagus fries! I mean everything tastes better with bacon and in my mind prosciutto is very similar to bacon in many ways but I figured that prosciutto would get crispy faster so the asparagus would not get over cooked. The recipe for these asparagus fries could not be simpler: 1. wrap asparagus in prosciutto, 2. bake, grill or pan fry until prosciutto is crispy, 3. enjoy! I have to say that these new crispy prosciutto wrapped asparagus fries are even better than the panko crusted asparagus fries and they are even easier to make! I will definitely be making a lot more of these while the asparagus is in season!
Actually I have already made a lot of these asparagus fries experimenting with different variations and here are some tips. You will want to use medium thickness asparagus but you could also bundle a few spears of thinner asparagus in each wrap. Bacon also works really well but it takes a bit longer to cook and you should go for thicker asparagus spears because of the increased cooking time. Pre-cooked bacon is also an option and since it cooks in roughly the same time as the prosciutto go for medium thickness asparagus.

The crispy and salty prosciutto goes so well with the roasted, tender and still slightly juicy asparagus!
Serve with soft boiled eggs and dip the fries into the yolk!
Of course you could also wrap the asparagus in BACON!!! And a drizzle of balsamic reduction will jazz things up even more!
Crispy Prosciutto Wrapped Asparagus Fries
Asparagus spears wrapped in salty prosciutto and cooked until the asparagus is tender and the prosciutto is perfectly crispy!
ingredients
- 1 1/2 pounds asparagus, trimmed
- 4 ounces prosciutto
directions
- Wrap the asparagus with the prosciutto and either bake in a preheated 450F/230C oven, grill or fry in a pan over medium-high heat until the asparagus is tender and the prosciutto is crispy on all sides, about 6-10 minutes, flipping half way through.
Option: Pre-wrap the asparagus the day before.
Option: Serve with a soft boiled, poached or fried eggs.
Option: Serve with hollandaise sauce.
Option: Serve with balsamic reduction.
Option: Add parmesan to the wraps.
