Mayonnaise is a ubiquitous condiment and I often like to jazz it up a bit by adding a spicy ingredient! Some of my favourites include chipotle mayo, sriracha mayo and kimchi mayo. Kimchi is s Korean style of fermented cabbage which includes plenty of chili pepper flakes, along with a ton of flavour! I like to make my own kimchi and you can also find it in some local stores. Kimchi mayo is simply finely chopped kimchi mixed with mayo and I like to add some toasted sesame oil for an amazing aromatic. You can use this in any place where you would use mayo, like on burgers, in sandwiches, for dipping fries into, etc.
Kimchi Mayo
A tasty and spicy mayonnaise sauce with chopped chunks of kimchi!
ingredients
- 2/3 cup mayonnaise
- 1/3 cup kimchi, finely chopped
- 1 teaspoon toasted sesame oil
directions
- Mix everything and enjoy!
Option: Add a bit of sweetness with sugar or honey.
Note: Store in the fridge and use within a few days.

Kimchi (the standard cabbage one) is a food that you either like or don’t like. If you do want to try kimchi again, you could try a fresher one as they are milder. (Kimchis flavour gets much stronger as it ages so the fresher one will be milder.) Kimchi also commonly contains a fermented seafood product (such as fish sauce) so you could try a vegetarian/vegan kimchi to eliminate this.
