I’m a big fan of quesadillas, I mean whats not to like about gooey melted cheese sandwiched between crispy tortillas, so when I came across the idea of a dessert quesadilla, a cheesecake quesadilla (aka a cheesecakedilla) none the less, I knew that I would have to make them! These cheesecake quesadillas are pretty much just cream cheese sandwiched between tortillas that are toasted until the tortilla are nice and crispy and the cream cheese filling is perfectly melted before sprinkling on some cinnamon sugar. I have to say that these cheesecakedillas are amazing, they taste just like cheesecake and they are so much easier to make! The recipe as written is for a basic cheesecakedilla and from there you can add fruit or berries, nuts or whatever your heart desires and you can also top them with or dip them into syrups, sauces, etc. Since strawberries are in season I topped these ones with a fresh homemade strawberry sauce and they were simply divine! I may never have thought to make a dessert style quesadilla but now that I have tried them I will definitely be making them very often!

Strawberry Cheesecakeadillas
Warm melted cream cheese sandwiched between crispy tortillas dusted in cinnamon and sugar, aka cheesecake in quesadilla form!
ingredients
- 1/4 cup cream cheese, room temperature
- 1 tablespoon sugar
- 1/4 teaspoon vanilla extract
- 2 (8 inch) tortillas
- 1 teaspoon unsalted butter, room temperature
- 1/2 teaspoon sugar
- 1/4 teaspoon cinnamon
- strawberry sauce to taste
directions
- Beat the cream cheese, sugar and vanilla extract until smooth, spread it on one tortilla and top with the other.
- Spread the butter on the outside of the tortillas, place in a pan and cook over medium heat until lightly golden brown, about 2-4 minutes per side, before sprinkling the mixture of the sugar and cinnamon on top, slicing and enjoying.

Holy smokes, so delicious! I made something similar to this last weekend, but I rolled the tortillas up and fried them with the cheesecake in the middle. That sauce would have made them so much better!

I too fell in love with Cheesecakeadillas. So much that I crave them always now! Was so excited coming across them on that same site, and was even more stoked to find out how easy they'd be to make, meaning anyone could make them for me! (I can't cook due to physical disability) and I have to say, these are AMAZING with blackberry coulis! Seriously. I highly recommend it. What's funny is I decided to have some for dinner tonight, but this time we're doing blueberry coulis! I was on your site trying to figure out what we would do for dinner, but it's getting too late & I knew I had to just go ahead & pick something so I decided on these, and right after deciding, I saw your post for these. Coincidence! I'll be saving this strawberry recipe for next time for sure!

Wow, I made these and they came out great. Easy too. Made them right after dinner for dessert. I also made the strawberry sauce and that came out wonderful as well.

I don't know how these taste but they sure look good. I used to drive to our neighborhood, Luby's Restaurant, for fried cheese cake once or twice a month. But, they've got rid of their weekend buffet, so that's the only thing left that I don't know how to do at home. I sure hope that this will "bridge the gap". Do u put the cinnamon and sugar on top of the butter before you grill it out after?

Yes it can! The tortillas will not be super crispy though.
