BT (Bacon and Tomato) Sandwich

Right now the hothouse tomatoes are looking really good and soon the field tomatoes will be in season. One of my favorite lunches is the simple and yet so tasty bacon and tomato sandwich. The key to a great tomato and bacon sandwich is ripe tasty tomatoes. I look forward to enjoying many more of these over the next few weeks.

BT (Bacon and Tomato) Sandwich

BT (Bacon and Tomato) Sandwich

Prep Time: 10 minutes Cook Time: 10 minutes Total Time: 20 minutes Servings: 1
ingredients
  • 2 slices of bread (toasted if desired)
  • 4 slices of bacon (cooked)
  • 1 tomato (sliced)
  • salt and pepper to taste
  • 1 tablespoon mayonnaise (optional)
directions
  1. Assemble sandwich.

    Man is this recipe ever complicated. I tried it and ended up with a blueberry muffin somehow! I mean, what do I do if I only have 3.5 strips of bacon? Why doesn’t the recipe account for that?!?

    Simple is always best, especially when it comes to tomato sandwiches! I add Duke’s Mayo to mine and as Valli said…”it’s drip down your arm delicious!”

    Mayo certainly is good in a tomato and bacon sandwich! This sandwich does tend to be a bit messy but it is well worth it.

    The sandwich that always makes me smile is a bacon, tomatoe, and peanut butter sanwich. I use the all natural unsalted peanut butter and pumpernickel or sourdough bread toasted with black pepper. Your taste buds will thank you.

    Try it on a bagel and add cream cheese. That's my favorite breakfast sandwich.

    omg! it's great! 2 of my favorite things are tomato sandwiches…and corn on the cob…only 1 time a year do they taste this good!

    Had one for lunch today. I have never toasted the bread though and I'm not going to start. I have never put lettuce on one either. Not a fan of lettuce outside of a salad.
