Htipiti (Greek Roasted Red Pepper and Feta Cheese Dip)

Htipiti (Greek Roasted Red pepper and Feta Cheese Dip)

When I was at the grocery store I asked for 100 grams of feta cheese from the deli section and I got more like 400 grams. I thought, no problem I really like feta I will take it anyways. So I needed a recipe to use up some extra feta cheese and I remembered seeing this recipe for htipiti or tyrokafteri or tyrokavteri, a Greek whipped feta cheese dip/spread. It has a lot of flavours that I really like, including feta, sun dried tomatoes and roasted red peppers. It also had some things in that I was not so sure about including the green onion and the jalapeno pepper. It was amazing! I finished all of it in one night. The roasted jalapeno pepper left a really nice warmth in the mouth. I think that I might even try increasing the amount of jalapeno the next time that I make this.

Thanks for the mention...isn't it just divine? The sun dried tomatoes are the suprising "x-factor" in this dip.

I am absolutely trying this dip TOMORROW. This sounds completely divine, and I adore feta soooo much. I have a recipe for greek salad I've been meaning to try that included a processed creamy feta dressing, which sounds so fantastic, rather than trying to stab at the chunks of feta with a fork.

If you love feta, you will LOVE this indulgent dish from Gourmet. It's feta & a stick of butter---that's it! I used an entire package of pappardelle pasta, browned one stick of butter in a skillet, then tossed with feta. That's all there is to it, and it's pretty unbeleivable.

Happy cooking!

truly,
Lindsey

This was really delicious, Kevin! I omitted the jalapeno and it was still really tasty.. I mean how could it not be with feta, roasted red pepper and sun-dried tomatoes? :)

I wrote about it here: http://tastespace.wordpress.com/2010/06/16/greek-roasted-red-pepper-and-feta-cheese-dip-htipiti/
