Chocolate chocolate chip cookies filled with festive crushed peppermint candy canes!


ingredients
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cup flour
  • 1/4 cup cocoa powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup crushed peppermint candy cane
directions
  1. Cream the butter and sugars and then mix in the egg and vanilla extract.
  2. Mix the flour, cocoa powder, baking soda, baking powder and salt and then mix it into the wet ingredients followed by the chocolate chips and crushed candy cane.
  3. Form 1-2 tablespoon balls of dough and place them on a parchment paper lined baking sheet and bake in a preheated 350F/180C oven until the bottoms are lightly golden brown, about 8-10 minutes.

I made the White Chocolate Chip version (but substituted mini chocolate chips). My cookies turned out very flat almost like a crisp. The taste is great but they don't look like your photo. Any suggestions as to what I might have done wrong?

Unknown: The ingredients that you use are going to make a big difference in this and most cookie recipes. I recently tried a different brand of all purpose flour which should have produced the same results as the other brand but all of a sudden all of my cookies were super thick and cake-like. It's unfortunate but once you get used to the flour, butter, sugar, etc that you are using it gets easier. I would suggest adding 2+ tablespoons flour and/or replacing some of all of the brown sugar with granulated sugar.
