S’mores are a favourite summer treat consisting of a fire-roasted marshmallow and a layer of chocolate sandwiched between two pieces of graham cracker and I was thinking that a cookie version would be amazing! Summer vacation is over and and so fire side s’more making isn’t happening as often so why not turn the flavours of s’mores into cookies? I started out with a basic chocolate chip cookie recipe, which already contains the milk chocolate component of the s’mores so I just needed to add the graham crackers, crumbled, along with mini marshmallows! These s’mores chocolate chip cookies could not be easier to make! You simply mix all of the ingredients and bake! It’s that easy! You could be enjoying a freshly baked batch of these irresistible cookies in less than 30 minutes so they are perfect for after school treats!
S’mores Chocolate Chip Cookies
Soft and chewy s’mores cookies just loaded with chocolate, graham cracker and marshmallows! Yum!
ingredients
- 1/2 cup (1 stick) butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/4 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup graham crackers, coarsely crumbled
- 1/2 cup chocolate chips (or chunks)
- 1 cup mini marshmallows
directions
- Cream the butter and sugars in a bowl before beating in the egg and vanilla extract.
- Mix the flour, baking soda, baking powder and salt before mixing into the wet ingredients.
- Mix in the graham crackers, chocolate chips and marshmallows .
- Roll the dough into 1-2 tablespoon balls and place them on a parchment paper lined cookie sheet about 2 inches apart from each other.
- Bake in a preheated 350F/180C oven until just lightly golden brown around the edges, about 8-10 minutes.

I have absolutely no idea what I may have done wrong with this recipe – but they were a mess. I am experienced baker and was so disappointed. They only thing I can possibly think of, is that the marshmallows were the issue.
Can you describe how the cookies looked when done? Were the marshmallows all completely melted or were they still mostly whole as they are in mine? If they are all completely melted then, it is probably the marshmallows, other wise I would need to know more to help.
Would refrigerating the marshmallows beforehand help prevent a melt down?
I have not tried that! It might slow it down a bit!
My cookies came out with the marshmallows completely melted. Is there something to do about this?

In these photos I used a jersey milk chocolate bar, but any milk chocolate bar works well!
Mine turned out with melted marshmallows. So, disappointed in that aspect.
i don’t know if it helped by i let my fresh marshmellows sit in open air to get stale a bit. about 6 hours…
my cookies were just wonderful. i did refrigerate the dough in formed scoops, and did not smoosh them down when they went in the oven.
Thanks for your suggestions. One question . . . how many cookies does this recipe make (it says 12 servings but not how many cookies constitute a serving)?
This recipe makes 12 large cookies (or 24 small cookies).
