A nice slice of pecan pie is always a welcome treat so when I came across the idea for these pecan pie cookies I knew that I had found one of the cookies for my holiday cookie platter this year! These pecan pie cookies are really just little pecan pies that actually use a pie crust for the cookie base and they are filled with a pecan pie filling. Having said that, they are actually really easy to make, you simply roll out the pie crust, cut some circles out, fold up the edges, fill them and bake them until they are lightly golden brown and crispy! I have to say that these pecan pie cookies are just like little pecan pies that you can eat with your hands! I am going to be making a lot of them for this years cookie platter because they will disappear quickly!

Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 25 minutes Servings: 12

All of the flavours of pecan pie in cookie form!

  • 1/2 cup pecans, chopped
  • 2 tablespoons butter, melted
  • 1/3 cup brown sugar
  • 1/4 cup corn syrup
  • 2 eggs
  • 1/4 teaspoon salt
  • 1 pie crust
  1. Heat the pecans, butter, brown sugar, corn syrup, eggs and salt in a sauce pan until it thickens, abut 5 minutes.
  2. Roll the pie crust out, cut out 2-3 inch circles (re-rolling the leftover dough as needed), fold up the edges about 1/4 inch and fill with the thickened filling mixture.
  3. Place the cookies on a parchment lined baking pan and bake in a preheated 400F/200C oven until the filling has just set, about 8-10 minutes before transferring to a wire rack to cool.

Option: Top with drizzled chocolate!

I made these and the folds unflolded as they baked, came out looking rather ugly but still tasted good.

Kevin, I ruined two batches of these thinking I did something wrong. I finally got the idea to check the original recipe and you MISSED a really important instruction: "In a large non-stick pan, combine butter, pecans, brown sugar, corn syrup, salt and eggs. Cook on the stove top over medium-low heat just until thickened. (You don't want it dry, just slightly thickened, about the consistency of pudding). Remove from heat and set aside." Please fix your recipe. thanks, Idas
