I am a huge fan of dill pickles and hummus and when you combine the two they get even better! This recipe is basically a standard hummus recipe with dill pickles, dill pickle juices and dill pureed right into the hummus! If you like dill pickles and hummus, then this dip is for you! I enjoy this as a dip with crackers, pitas, veggies, etc. and it’s also amazing as a spread in wraps and sandwiches!
Dill Pickle Hummus
Cool and creamy hummus packed with the flavours of dill pickles!
ingredients
- 2 (15 ounce) cans (~3 cups) chickpeas, drained and rinsed
- 1/2 cup tahini
- 2 cloves garlic, minced
- 1/4 cup lemon juice (~1 lemon)
- salt to taste
- 1/2 cup dill pickle, diced
- 1/4 cup dill pickle juice
- 1 tablespoon dill (chopped) (or 1 teaspoon dried dill)
directions
- Puree everything in a food processor, optionally adding water or olive oil to get it to the desired consistency.
Option: Add 1/2 teaspoon cumin.
