Banana Sushi

Breakfast banana ‘sushi’ covered in chocolate peanut butter spread topped with fun ingredients!

Sushi is always a restaurant lunch or dinner treat but how about a fun and easy banana sushi for breakfast or brunch? This banana sushi starts out with a banana
sushi roll that is topped with a nut butter like peanut butter or even better, a chocolate peanut butter like REESE Spreads peanut butter chocolate, that is spread on top and then fun ingredients are sprinkled on top! You can go with pretty much anything for the sushi toppings from breakfast ingredients like cereal and bacon to healthy ingredients like nuts, chia seeds, quinoa, etc. here are a few that I made for a recent breakfast banana sushi party including:

  • Pistachio, Chia and Popped Quinoa Chocolate Peanut Butter Banana Sushi
  • Peanut and Bacon Chocolate Peanut Butter Banana Sushi
  • Coconut Granola Chocolate Peanut Butter Banana Sushi
  • Avocado Chocolate Peanut Butter Banana Sushi
  • Tortilla Rolled Chocolate Peanut Butter Banana Sushi

Once you have your bananas all suited up you just slice them and you are ready to enjoy them sushi style with chopsticks and optional chocolate and/or caramel sauce for dipping!
Banana sushi is so easy to make, it’s kid friendly and it can be really healthy!

Prep Time: 15 minutes Total Time: 15 minutes Servings: 4

Breakfast banana ‘sushi’ covered in chocolate peanut butter spread topped with fun ingredients!

ingredients
  • 5 bananas, peeled
  • 10 tablespoons REESE Spreads peanut butter chocolate
  • 1 tablespoons pistachios, chopped
  • 1 teaspoon chia seeds
  • 1 teaspoon popped quinoa
  • 1 tablespoon granola
  • 1 tablespoon coconut
  • 1 tablespoon peanuts, chopped
  • 1 strip bacon, cooked and crumbled
  • 1/2 avocado, thinly sliced
  • 1 pinch red pepper flakes
  • 1 tortilla
directions
  1. Spread the REESE Spreads peanut butter chocolate over the bananas and top with the ingredients and roll one in the tortilla before slicing.
Note: To make popped quinoa, heat large pan over medium heat, add quinoa in a thin layer on the bottom of the pan, cover and cook until the quinoa stops popping, shaking everything up every few seconds to prevent burning, before spreading over a baking sheet to cool.
Option: Serve with chocolate sauce for dipping!
