Chipotle Peach Salsa Quesadillas

Smoky and spicy peach salsa quesadilla just bursting with summery freshness!

Summer isn’t gone just yet and I have been enjoying its bounty while it lasts! One thing that I have been really into lately is fruit based salsas and with all of the amazing fresh peaches around these days a peach salsa was definitely on the menu. I kept the peach salsa nice and simple with fresh diced peaches, red pepper, onion, cilantro lime and some chipotle chilies for smoky heat. Although this chipotle peach salsa is great to snack on with tortilla chips it is always fun to use a salsa in another dish and top on my list was to place it in some quesadillas along with plenty of ooey gooey melted cheese! I gave the peaches a nice big dice so there would be large chunks of them just bursting in your mouth as you eat the quesadillas! I have to say that using peaches to make a slasa and then covering it in hot melted cheese is a great way to enjoy them!

Chipotle Peach Salsa Quesadillas

Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes Servings: 1

Smoky and spicy peach salsa quesadilla just bursting with summery freshness!

ingredients
  • 2 (6-8 inch) tortillas
  • 1/2 cup monterey jack cheese, shredded
  • 1 cup chipotle peach salsa (see below)
directions
  1. Heat a pan over medium heat, place a tortilla in the pan, sprinkle half of the cheese over the tortilla, followed by the peach salsa, the remaining cheese and tortilla.
  2. Cook until the quesadilla is golden brown on both sides and the cheese is melted, about 2-4 minutes per side.

A peach salsa that is the perfect combination of smoky heat and juicy sweetness.

ingredients
  • 4 peaches, diced
  • 1 chipotle chili in adobo, chopped
  • 1/4 cup red pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juice and zest
  • salt to taste
directions
  1. Mix everything together and enjoy!
Option: Grill the peach halves before dicing.

    would it be possible, in any way, to separate the narrative and picture from each recipe, for printing purpose?. love the recipes and narrations. but, due to a limited income, the printing of your awesome recipes uses an incredible amount of printing ink and paper (usually double). i usually end up having to hand write them for my files. thank you for your consideration.

    Didn't have any peaches But I used Nectarines.

    It tasted great but in hindsight I should have roasted the Nectarines a bit and used a bit more of the Adobo sauce that came with the chilis.
