Chipotle Sweet Potato and Black Bean Hash with Guacamole

A hearty, tasty and healthy sweet potato and black bean hash topped with a simple guacamole.

Up next for my menu for the Big Game is a hearty, tasty and healthy sweet potato and black bean hash topped with a simple guacamole for breakfast to ensure that you start the day off right! (Although I will be making this for the big game it is perfect any time of the year!) This hash is super simple to make, it starts with bacon (omit for vegetarian), followed by onions, garlic, cumin, chipotle chili powder, the sweet potatoes and finally the black beans before being topped with a simple guacamole. The key to a quick cooking time is to dice the sweet potatoes small as the larger the sweet potato cubes are the longer it will take to cook them until tender. I like to keep things simple and go with an avocado topping with lime juice and salt but if you want something a little more complex you can go with a more robust guacamole. Of course pretty much everything is better when topped with a fried egg so I like throw some on as well and that gives me a trio of my favourite foods: bacon, eggs and avocado all on a tasty bed of sweet potato and black bean hash! Feel free to add any other extras like sour cream, salsa, cheese, etc.

You can make it all in one large pan and serve it out on plates or you can get all of the ingredients ready one day and then cook individual servings in a smaller pan and serve it in the pans.

Chipotle Sweet Potato and Black Bean Hash with Guacamole

Prep Time: 10 minutes Cook Time: 35 minutes Total Time: 45 minutes Servings: 6

A hearty, tasty and healthy sweet potato and black bean hash topped with a simple guacamole.

ingredients
    For the simple guacamole:
  • 1 large avocado, peeled and stoned
  • 2 tablespoons lime juice (~1 lime)
  • salt to taste
  • For the hash:
  • 4 strips bacon, cut into 1 inch pieces
  • 1 medium onion, diced
  • 2 cloves garlic, chopped
  • 1 teaspoon cumin, toasted and ground
  • 1 tablespoon chipotle chili powder
  • 2 pounds sweet potato, peeled and diced small
  • 1 (15 ounce) can black beans, drained and rinsed (or 1 1/2 cups cooked beans, from 1/2 cup dry)
  • salt and pepper to taste
  • 1/4 cup cilantro, chopped
directions
    For the simple guacamole:
  1. Mash or puree everything in a food processor.
  2. For the hash:
  3. Cook the bacon in a heavy bottomed pan over medium heat and set the bacon aside on paper towels to drain, reserving the grease.
  4. Add the onions and cook until tender, about 3-5 minutes.
  5. Mix in the garlic, cumin and chipotle chili powder and cook until fragrant, about a minute.
  6. Add the sweet potato, toss to coat, press them down into the pan, let them cook until the start to brown, about 7-10 minutes, flip them and let them cook until they start to brown again, about 7-10 minutes.
  7. Mix in beans, season with salt and pepper to taste and cook until heated through.
  8. Remove from heat, sprinkle on the cilantro, serve topped with the simple guacamole and enjoy!
Note: The key to the sweet potatoes cooking until tender quickly is to cut them into small pieces.
Option: Instead of using this simple guacamole go with a full on guacamole like this guacamole.
Option: For vegetarian omit the bacon and use 2 tablespoons of oil instead.
Note: If you are not a fan of heat you might want to start with less chipotle chili powder and build up to your desired level of heat.
Option: Top with fried or poached eggs.
Option: Top with sour cream, cheese, salsa, lime juice, etc.

    Loved this recipe! I did make a couple of modifications. I roasted the sweet potato in the oven and then crisped it up at the end in the fry pan. More hands off if you are entertaining and try to watch the game! I also cut back the chipotle by about half and it was still plenty spicy. Thanks for the great brunch recipe it was a big hit!
