To complete my steak in green peppercorn sauce meal I needed only one more thing, something green. I like to try to include green vegetables in my meals whenever possible. Green beans are still readily available at the farmers market and I wanted to do something with them. I remembered seeing a recipe for green beans in parmesan and sage breadcrumbs that sounded nice. I did not have the sage on hand so I decided to use the thyme that I did have. The green beans in parmesan bread crumbs were really easy to make and took very little effort. The toasted parmesan bread crumbs were really tasty and provided a nice crunchy texture to the green beans.
Green Beans with Parmesan Bread Crumbs
ingredients
- 1 tablespoon olive oil
- 1 clove garlic (chopped)
- 1 tablespoon thyme (chopped, or sage)
- 1/4 cup bread crumbs
- 1/4 cup parmigiano reggiano (grated)
- 1 pound green beans (trimmed, steamed)
directions
- Heat the oil in a pan.
- Add garlic and thyme and saute until fragrant, about one minute.
- Add the breadcrumbs and parmigiano reggiano and saute until golden brown and toasted.
- Remove from heat and toss with the steamed green beans.
A delightful accompaniment!
Cheers,
Rosa

Great side dish!!
Yeah, it’s always a good idea to include green in your daily meals 🙂 I love this side-dish, Kevin, and maybe even more than sage 😉

These look delish…and so much more healthy than the casserole alternative.

Ooh – this looks delish! Green beans are great by themselves, but even nicer when seasoned up a bit. I love this dish.

I’m loving the Parmesan bread crumbs! A fine way to serve green beans.
You do make delightful looking meals! Can I come to your house? I’ll leave the entourage behind…
Hey Kevin 🙂 I’m a few posts back, but yesterday afternoon I made your cranberry, oatmeal, white chocolate cookies, althought I subbed slivered almonds for the pistacios. I also used almond extract instead of vanilla. OMG I love you because this is the PERFECT cookie recipe ever! It’ was amazing, I underbaked the cookies JUST a tad and they disappeared between 5 people last night lol.
Thanks for the recipe, I’m keeping it forever! (I also used quick cooking oats and they worked fine).
Those green beans look cooked to perfection, and I love the addition of parmesan and bread crumbs. Looks and sounds stupendous.
I was to surprised to see the parmesan here! What a great idea! I think I’d actually prefer the thyme over the sage, although either one would be delicious. This looks so pretty, and I bet it tasted terrific with your steak and onions. YUM!
Everyone’s doing green beans right now…I think the breadcrumbs nail this.
These sound great! I love this as an alternative to most of the heavy winter veggies. I’ll definitely try this as a side dish soon,
