Reuben Dip

Reuben Dip

A hot cheese based dip with all of the flavours of a reuben sandwich with corned beef, sauerkraut, swiss cheese and Russian dressing. Serve with toasted dark rye for dipping to complete the reuben sandwich flavours.

Over the last week I had been enjoying the leftover corned beef in the form of reuben sandwiches . I made sure to save one serving of the corned beef for the weekend because there was one more recipe that I wanted to try with it. I had come across a recipe for a reuben dip a while ago and I just knew that I would have to make it. It has all of the great flavours of a reuben sandwich in the form of a dip! I tweaked the recipe a bit and added some cream cheese as it the base of all of my favorite hot cheesy dips. I also decided to serve it with some toasted rye bread which was the one component of a reuben sandwich that was missing. The reuben dip was amazingly good! It was nice and warm and ooey and gooey and stringy and addictively tasty. I have never seen a bowl of dip disappear so quickly! I ran out of toasted rye before the dip and the dip was eagerly finished off with a spoon. I will definitely be making this again.

Prep Time: 5 minutes Cook Time: 20 minutes Total Time: 25 minutes Servings: 4

A hot cheese dip with all of the flavours of a reuben sandwich with corned beef, sauerkraut, swiss cheese and russian dressing. Serve with toasted dark rye for dipping to complete the reuben sandwich flavours.

ingredients
  • 1/2 cup cooked corned beef, diced or shredded
  • 1/4 cup sauerkraut, squeezed, drained, coarsely chopped
  • 1/4 cup swiss cheese, shredded
  • 4 ounces cream cheese, room temperature
  • 1/4 cup russian dressing
directions
  1. Mix everything, place it in a baking dish and bake in a preheated 350F/180C oven until bubbling on the sides and golden brown on top, about 20-30 minutes.
Slow Cooker: Mix everything, place it in the slow cooker and cook until the cheese is nice and melted about 1-2 hours on high or 2-4 hours on low.

    What a great idea….I just posted a parmesan cheese dip from someone at one of my dinners–and she suggested I serve it on a piece of good toast (ciabatta) topped with an egg fried in olive oil. We had it for dinner, and it was delicious beyond belief. I bet this would be good like that, too.

    Oh man, can’t wait to try this one. Another one of my favorite foods “deconstructed” I have made Jalepeno Popper dip (http://to2sassy.blogspot.com/2008/11/taking-it-apart-and-putting-it-back.html)and Buffalo Chicken Wing dip (http://to2sassy.blogspot.com/2008/11/its-beautiful-life.html) over the past several months and LOVED the results.     Looks delish! I love taking classic dishes (i.e.: the reuben) and turning them into something else, but still using the same base ingredients.

    Jamie: This dip really does eat like a meal and I have done it that way on several occasions. If you have any leftover you can spread it on some toast and throw it under the boiler for a minute or two for a quick meal the next day. (I only feel a little bit guilty about having it like that for breakfast the next day.)

    Hu, just happened on this recipe. My sis-in-law loves Reubins so I want to try. Question…this may sound outrageous…I've never bought or cooked corn beef! The closest I come is to buy CANNED CORN BEEF which I use in a soup. Would that work? I searched your comments & found no one asking so I'm already a bit embarrassed thinking it may be close to unthinkable…please reply, thanks very much.

    Anonymous: I have actually never tried canned corn beef. I imagine it could be used but I am not sure about the flavour.

    Cooking your own corned beef is actually very easy. The butchers around here have them in vacuum sealed bags with the brining solution so you pretty much just put everything from the bag into a slow cooker and cook at low for 8 hours.

    I froze leftover corned beef and just found it in the freezer this week. My husband who does not like Reubens (crazy right) loved it and my 12 year old that loves reubens did not like it. She is my picky one though. In our house if 3 out of 4 love it it is a make again. Now I cannot wait until March to stock up on corned beef. You have added 2 more dinners to my file. The ruben soup was a 3.5/4. Hubby said it was ok. Thank you!

    I add one 8oz package of cream cheese, sour cream, and some milk in mine. Even people who don't like sauerkraut like this.
