Over the last week I had been enjoying the leftover corned beef in the form of reuben sandwiches . I made sure to save one serving of the corned beef for the weekend because there was one more recipe that I wanted to try with it. I had come across a recipe for a reuben dip a while ago and I just knew that I would have to make it. It has all of the great flavours of a reuben sandwich in the form of a dip! I tweaked the recipe a bit and added some cream cheese as it the base of all of my favorite hot cheesy dips. I also decided to serve it with some toasted rye bread which was the one component of a reuben sandwich that was missing. The reuben dip was amazingly good! It was nice and warm and ooey and gooey and stringy and addictively tasty. I have never seen a bowl of dip disappear so quickly! I ran out of toasted rye before the dip and the dip was eagerly finished off with a spoon. I will definitely be making this again.
Reuben Dip
A hot cheese dip with all of the flavours of a reuben sandwich with corned beef, sauerkraut, swiss cheese and russian dressing. Serve with toasted dark rye for dipping to complete the reuben sandwich flavours.
ingredients
- 1/2 cup cooked corned beef, diced or shredded
- 1/4 cup sauerkraut, squeezed, drained, coarsely chopped
- 1/4 cup swiss cheese, shredded
- 4 ounces cream cheese, room temperature
- 1/4 cup russian dressing
directions
- Mix everything, place it in a baking dish and bake in a preheated 350F/180C oven until bubbling on the sides and golden brown on top, about 20-30 minutes.
Oh my, dip your bread, this looks fabulous Kevin. I’m not surprised you ran out of toast.
What a great idea….I just posted a parmesan cheese dip from someone at one of my dinners–and she suggested I serve it on a piece of good toast (ciabatta) topped with an egg fried in olive oil. We had it for dinner, and it was delicious beyond belief. I bet this would be good like that, too.
That dip looks really good!
How absolutely yum Kevin…mmmmm!!
That looks excellent!
Ooooo does this look good! I love reuben sandwiches, so I’m going to have to try this :)!
Perfect idea! That dip would be gone in a flash!

What a great idea! I love reubens! 🙂
I didn’t know what reuban dip was until I had it at a potluck party over the Holidays. It was quite good and hearty.
Definitely a case of the whole being more than the sum of its parts! By the end of this week I’ll surely have some leftover corned beef to play with.
Thanks for the introduction to a new dip!
This looks so very scrumptious. Perfect to bring to a party. Thanks for the idea!
I miss Reuben sandwiches and having just the ingredients, sans bread, cold on a plate isn’t the same. Thanks for posting this dip recipe, Kevin. As soon as I’m over the bug I have this will be one I’ll try. Hey, you’re my hero of the day. 🙂
Great click Kevin,as always !!
This would be a bit too spicy for me but it really looks great Kevin!!
That’s quite a unique idea!

I’ve seen this recipe around but haven’t tried it. It looks so good..unfortunately I ate all my corned beef.
I might take the sauces out and substitute with thousand island, but I guess yours is the cheaper alternative with what’s on hand.
Oh Kevin. I could literally eat this dip and bread for dinner – the whole thing. Looks fantastic!
That dip..oh..my tummy is kicking me now..looks superb Kevin..!!
First tim here..yum space u got..:)
You were right on with the bread — Looks great!
What a tasty dip! A gorgeous idea!
Cheers,
Rosa
Is there anything from inviting that a dip with strings of cheese? I think not! 🙂
I am sad to say that we never have any corned beef left to make such delicious treats, but I will go and buy a corned beef now just for this recipe!!!
Cool! I want to make a vegetarian version of this now.
The dip looks reall yummy, though i have never had corned beef.
Sounds great! I am also psyched to see all your maple ideas. Thanks for stopping by my blog – we of the tiny kitchens must stick together! 🙂
This dip looks wonderful…I will have to substitute the corned beef with corned mutton ( since I don’t eat beef).
This looks insane! What a creative spin!
Oh does that sound wonderful. Such a great idea!
Yum – I love hot dips. Crab and cheese is my favourite. I will have to give the Reuben dip a try once the weather cools a little.
OH My! This is soo good!
Oh man, can’t wait to try this one. Another one of my favorite foods “deconstructed” I have made Jalepeno Popper dip (http://to2sassy.blogspot.com/2008/11/taking-it-apart-and-putting-it-back.html)and Buffalo Chicken Wing dip (http://to2sassy.blogspot.com/2008/11/its-beautiful-life.html) over the past several months and LOVED the results. I am sure this one is going to be a winner too. Hmmm….what other foods can we deconstruct and make into a dip????
wow! almost all the ingredients are my favorites and it looks yummy too!
Looks delish! I love taking classic dishes (i.e.: the reuben) and turning them into something else, but still using the same base ingredients.
P.S.: Thanks for the comment! I’ve been a fan of your blog for a long time! 🙂
That’s really fun! I had this at a bar once and was suprised and how tasty it was.
This brings a smile to my little Montreal-er heart. A rueben dip looks deliciously comforting and I am DEFINITELY going to make this next time I have a party. Thanks for sharing!
Um, yum! Thanks for this – always looking for inspired dip ideas for parties!
WOW incredible – I can understand how this one went real quick!!!
A reuben sandwich is my favorite sammy. I think I am going to bookmark this for what I am bringing to Easter. Thanks Kevin!

I'll need one or the other…a defibrillator or a napkin
Thanks Kevin
I should know better than to stumble food when I'm hungry. This looks delish!
Kevin, is this a dip or a meal? It really has all the elements of a meal and looks scrumptious! If someone placed a ramekin of this in front of me… meal.
Jamie: This dip really does eat like a meal and I have done it that way on several occasions. If you have any leftover you can spread it on some toast and throw it under the boiler for a minute or two for a quick meal the next day. (I only feel a little bit guilty about having it like that for breakfast the next day.)
Hu, just happened on this recipe. My sis-in-law loves Reubins so I want to try. Question…this may sound outrageous…I've never bought or cooked corn beef! The closest I come is to buy CANNED CORN BEEF which I use in a soup. Would that work? I searched your comments & found no one asking so I'm already a bit embarrassed thinking it may be close to unthinkable…please reply, thanks very much.
Anonymous: I have actually never tried canned corn beef. I imagine it could be used but I am not sure about the flavour.
Cooking your own corned beef is actually very easy. The butchers around here have them in vacuum sealed bags with the brining solution so you pretty much just put everything from the bag into a slow cooker and cook at low for 8 hours.
This is the first thing I've made from this site that I didn't care for; but then everyone tastes are different. I can't put my finger on what it was that I didn't like.
I froze leftover corned beef and just found it in the freezer this week. My husband who does not like Reubens (crazy right) loved it and my 12 year old that loves reubens did not like it. She is my picky one though. In our house if 3 out of 4 love it it is a make again. Now I cannot wait until March to stock up on corned beef. You have added 2 more dinners to my file. The ruben soup was a 3.5/4. Hubby said it was ok. Thank you!
I add one 8oz package of cream cheese, sour cream, and some milk in mine. Even people who don't like sauerkraut like this.
