Meatballs are always fun and they are so easy to make! These meatballs are inspired by some of my favourite Thai flavours and they’re served in a quick and tasty Thai coconut curry! The meatballs start out with the usual suspects including the ground meat, an egg, and breadcrumbs and they’re seasoned with onion, garlic, ginger, cilantro, basil, lemongrass, lime, fish sauce and, of course, Thai red curry paste. These meatballs are amazing served in any way but I particularly enjoy them in a Thai style coconut curry which is the simple combination of curry paste, coconut milk, lime juice, sugar and fish sauce, the perfect blend of spicy, sour, sweet and salty! I like to serve these meatballs in curry over steamed rice or noodles with fresh cilantro, basil, green onions, and chopped peanuts.
Thai Meatballs in Curry
Easy Thai meatballs in a tasty coconut red curry sauce!
ingredients
- 1 1/2 pounds ground beef (or pork)
- 1 large egg
- 1/2 cup breadcrumbs (gluten-free for gluten-free)
- 1 small onion, grated
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon cilantro, chopped
- 1 tablespoon basil, chopped
- 1 tablespoon lemongrass, minced
- 1 teaspoon lime zest
- 1 tablespoon fish sauce
- 1 tablespoon red curry paste
- 1 teaspoon oil
- 2 tablespoons Thai red curry paste
- 1 (14 ounce) can coconut milk
- 2 tablespoons fish sauce
- 2 tablespoons lime juice (~1 lime)
- 1 tablespoon palm sugar (or sugar)

- Mix everything well, form into 2 tablespoon balls, place on a baking sheet and bake in a preheated 400F/200C oven until cooked and lightly golden brown, about 25-30 minutes.
- Heat the oil in a pan over medium heat, add the curry paste and saute until fragrant, about a minute.
- Add the coconut milk, fish sauce, lime juice and zest, sugar and meatballs and bring to a boil.

Option: Serve over rice with fresh cilantro, basil, green onions, cucumber, chopped peanuts, etc.
Tip: The meatballs can be made ahead of time, or even frozen, before baking them (after thawing if frozen).
