The other day I noticed a sale on trout which reminded me that it has been a long time since I last made a fish dish and it was the perfect excuse to do so. Fish amandine, or in this case trout amandine (aka almondine), is a super quick and easy dish where the fish is fried and then served in a browned butter, lemon and almond sauce and it can be made with any number of different fish fillets. Essentially after frying the fish all that needs to be done is to brown the butter in the pan, add the almonds and toast in the butter until lightly golden brown and then hit the sauce with some lemon juice before serving over the fish. This dish is definitely easy enough to tackle on a weeknight and it is also sure to impress at a dinner party.
I served the trout on a bed of asparagus which also goes well in the amandine sauce.
Note: You can leave the skin on or remove it!

Beautiful presentation!
One of my favorite ways to prepare trout!!
this is beautiful! I love this dish, and am happy to have a recipe for it.
The trout are just starting to stir in the river by my house so I am ready to start catching (and eating) a few.
I will definitely try this one!
Kevin, this looks delectable! 🙂
I use Amaretto instead of lemon juice, burning the alcohol off. Pretty tasty!!!!
Anonymous: Adding a splash of amaretto would be a great way to enhance the almond flavour!
Delicious fish recipe, Kevin!
I love trout Kevin and this look delicious!!
Love with the asparagaus!
we used to make this all the time in culinary school!! It's such a classic and delish dinner
Cooked this for my boyfriend tonight and he thought it was absolutely marvellous… and I totally agree with him – this is quick, easy and delicious 🙂
I tried it too & it came out great. I made few changes to the recipe. I broiled the trout for 15 min instead of frying it in butter. While making the sauce, I sauteed some chopped garlic for additional flavor.
I just got freshly caught trout – thanks for this almondine recipe! It's whats for dinner tonight!
Absolutely delicious! I used sea trout that my husband caught. This is one of the few recipes that he likes as well as fried or grilled. As for me I think this is incredible!
