Late summer has to be one of my favourites times of year with all of the amazing fresh produce that is available and I particularly enjoy all of the field ripened tomatoes! One of the best, quickest and easiest way to enjoy all of those tomatoes has to be in BLTs! A BLT is a sandwich consisting of bacon lettuce and tomato and it is a classic with good reason as the salty bacon, the crisp lettuce and sweet and the juicy tomatoes is a magical combination! All it takes to make a BLT is to cook the bacon, assemble the sandwich and you are in cloud nine in less than ten minutes!

Mayo is a good addition to an already amazing BLT and since it is late summer, why not make it a basil mayo or a pesto mayo?

A bacon, lettuce and tomato sandwich is one of the best way to enjoy some nice ripe tomatoes!


Servings: makes 2 sandwiches

Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes

Ingredients
  • 3 strips bacon
  • 2 slices bread, lightly toasted
  • 1 leaf lettuce
  • 1 ripe tomatoes, sliced
  • pepper to taste
  • 1 tablespoons mayo or basil mayo (optional)
Directions
  1. Cook the bacon until crispy, assemble the sandwich and enjoy.

Oh man, you are my kind of guy. I was just thinking about making BLT's tomorrow (seriously, I really was planning on making them), and now I'm scrapping that plan and making these instead. I've had them with avocado before, and seeing it again here, in various forms, has rekindled my want of it. Your addition of egg is inspired. Bravo, Kevin!

Claud: I have been having them one or two per day. I find they go well at breakfast as well as lunch and dinner. I have been trying to get as much tomato enjoyment as possible while they are ripe.

My FAVORITE sandwich is the BLAT - I love the combo of the avocado in the blt. I haven't tried it with the guacamole though. I'll have to give that a go.

I don't think I'd dig the egg - the runny yolk kinda grosses me out. I can't even watch our son eat his eggs because he likes them like that - UGH.

I love BLTs. Try substituting the lettuce for alfalfa sprouts. The whole sandwich tastes so earthy. It is delicious.

Hi Kevin!
At this time of year, with 'real' tomatoes, I don't think there is such a thing as a bad BLT!
You might want to try this one, for a special treat - use Applewood smoked bacon, and add sprouts to your already wonderful sandwich. I call this a 'California' BLT, and it's awesome!

My mom use to make BLT's on a regular basis and I always LOVED them! The addition of Avocado sounds awesome, and I am going to have to try it. I always ate mine with mayo, but mashing some Avocado is going to be SO good!

Red Robin (restaurant) has the most amazing BLATT (bacon, lettuce, avocado, tomato, and turkey--on a crossaint! So good!

I just bought some little baby cherry tomatoes from our farmer's market today that are almost like eating candy, so sweet and good!

How ironic. WE had BLT's the same night. I wanted to make bread but it was 90 here. I bought a loaf of sour dough and made real bacon. I usually am a turkey bacon fan but you have to have at least one of these with summer's fresh tomatoes.

I do the BLAT - avocado - we love it this way. Then when we're up to the 'messy good stuff', we add sauted mushrooms and a sunny-side up egg.
